Back when I went vegan 8 years ago, I never would have thought I would be making a Vegan Steak Salad. But, the vegan products on the market today (vs 8 years ago) is wild! And I love the vegan steak tips from the freezer section. They are a great base to add your own flavors. And for this salad I gave them a balsamic, soy glaze. It adds a nice crust to the vegan steak…and a delicious flavor. The “steak” is served over greens with a simple vinaigrette, vegan cheese, avocado, red onion & microgreens. This salad is protein-packed and so delicious! You’ll want to serve this at every party!

Step One: Make the Vegan “Steak”

For the vegan steak I used Beyond Meat – you can find it in the freezer section. I really like these! They have a great texture and you can add whatever flavors you like and they absorb them super well!

For this recipe, I decided to go with garlic, balsamic vinegar and soy sauce. It’s a simple combo, but the flavor is out of this world!

Heat some oil in a skillet over medium heat. Add the vegan steak and a pinch of pepper. Cook down until the steak starts to char (about 5 minutes). Add the garlic, balsamic and soy sauce. Cook for another 3-5 minutes, or until the sauces start to caramelize. Remove from the heat and set aside.

Step Two: Make the Dressing

The dressing for this salad is simple, but packs a punch. You just need a handful of ingredients:

  • avocado oil
  • apple cider vinegar
  • whole grain mustard
  • garlic
  • salt & pepper 

Add everything to a bowl or jar and whisk until combined. The dressing is tart, creamy and garlicky. The perfect combo!

Step Three: Assemble & Serve

To assemble grab some mixed salad greens and arugula. Add them to a platter and drizzle over half of the dressing. Toss to combine and now it’s time to load it up.

Top the greens with the steak, avocado, vegan cheese, red onion and microgreens. You can serve the extra dressing on the side.

I also love a piece of buttered bread on the side of this salad!

Tips & Tricks

I thawed the “steak” before pan frying it. Not necessary, but it will help it char and cook quicker.

For the vegan cheese I used Boursin. I would also recommend vegan feta!

This is best served right away so the greens don’t wilt. If you want to make it ahead of time, leave off the dressing & avocado and add them right before serving.

  • 2 cups salad mix
  • 2 cups arugula
  • 1 avocado sliced
  • 2 tablespoons vegan cheese crumbled
  • red onion thinly sliced
  • microgreens optional

  • Heat the oil in a skillet over medium heat. Add the vegan steak and a pinch of pepper. Cook down until the steak starts to char (about 5 minutes). Add the garlic, balsamic and soy sauce. Cook for another 3-5 minutes, or until the sauces start to caramelize. Remove from the heat and set aside.
  • Add all of the dressing ingredients to a bowl and whisk to combine. Taste and adjust the seasonings as needed – it will be acidic, but once mixed with the salad it will balance.
  • To assemble, add the greens to a platter and drizzle over half of the dressing. Top the greens with the steak, avocado, vegan cheese, red onion and microgreens. Serve the extra dressing on the side.
