Vegan Steak Tacos

These Vegan Steak Tacos are SO good! Crispy vegan steak is cooked until super crispy and then loaded up in tortillas with a creamy chipotle sauce!

I have had these Vegan Steak Tacos on my to-do list for a long time! It is a super easy weeknight dinner AND they are just freaking delicious. The vegan steak gets crisped up in a pan and then is loaded in warm tortillas with shredded cabbage, avocado and dairy-free chipotle sauce. Taco night at home has never looked (and tasted) so good.
Step One: Cook the Vegan Steak
The vegan steak I used for this recipe is from Beyond Meat. It is one of my favorite vegan meat products and you can buy it at lots of stores in the freezer section.

The key to making this vegan steak extra tasty is getting it extra crispy. If you have a cast iron skillet, you’ll want to break it out.
Heat some oil in the skillet over medium heat. Add diced onion and cook down for 2 minutes. Pour in the vegan steak and some taco seasoning. Toss to coat and spread in an even layer. Allow to cook, undisturbed, for 3-5 minutes – you want a nice crust to form on the vegan steak. Toss and cook for another 5 minutes. Add lime juice and some cilantro right before serving.

Step Two: Make the Chipotle Sauce
I love a chipotle sauce. I love any sauce, if I’m being honest. And this creamy chipotle sauce is the perfect addition to these tacos. You get a little spice and a nice creaminess.

Here is what you need:
- vegan mayo
- non-dairy yogurt – unsweetened
- garlic
- chipotle pepper in adobo sauce
- adobo sauce – from the chipotle can
- lime juice
- salt & pepper
Add everything to food processor or blender and blend until smooth. You can thin out the sauce with water as needed.


Step Three: Assemble & Serve
Before assembling, be sure to heat up your tortillas. I like to do this over an open flame, but you could also do it in a skillet.

Layer each tortilla with cabbage, steak, avocado, chipotle sauce and more cilantro. Serve with lime wedges on the side.
These tacos are ready in under 30 minutes, pack in lots of protein and taste amazing! Your whole family is going to want to go back for seconds!


Tips & Tricks
No need to thaw the vegan steak before adding it to the skillet.
A cast iron skillet isn’t necessary, but helps give the vegan steak that nice crust.

Ingredients
FOR THE VEGAN STEAK
- 2 tablespoons avocado oil
- 1/2 red onion diced
- 1 10-ounce package vegan steak tips I used Beyond Meat
- 2 tablespoons taco seasoning
- lime juice to taste

- 1/4 cup vegan mayo
- 1/4 cup non-dairy yogurt unsweetened
- 1-2 cloves garlic peeled
- 1 chipotle pepper in adobo sauce
- 1/2 tablespoon adobo sauce from the chipotle can
- 1/2 lime juiced
- salt & pepper to taste
- water to thin
FOR THE TACOS
- 8 corn tortillas
- 1/2 small head cabbage shredded
- 1-2 avocados sliced
- 1 bunch cilantro chopped
- lime wedges

- While the steak is cooking, add all of the chipotle sauce ingredients to a blender and blend until smooth. Thin with water and adjust the seasonings as needed.
- To assemble, heat the tortillas over an open flame or in a skillet. Layer each tortilla with cabbage, steak, avocado, chipotle sauce and more cilantro. Serve with lime wedges on the side.

- You probably won’t use all of the chipotle sauce – the nutrition info includes all of it, so the numbers are slightly higher. You can store the leftovers in the fridge.
