I could eat this Charred Broccolini Caesar Salad at every meal! It might be my all-time favorite way to eat broccoli now! I mean how can you go wrong when it is tossed in vegan parmesan, roasted until charred and then served with my Caesar dressing and garlic croutons?! You will want this for breakfast, lunch and dinner.

steps

step 1: roast the broccolini

Charred broccolini (or broccoli in general) is one of my favorite ways to get my veggies in. But today we are taking it to the next level by tossing the broccolini in vegan parmesan before roasting it.

The vegan parmesan gets browned and toasted. Seriously, so good!

Trim any thick stems from the broccolini and cut any large pieces in half lengthwise. Add them to the baking sheet with the oil, vegan parmesan and a pinch of salt & pepper. Toss to coat and spread in an even layer. Place in the oven for 15 minutes. Flip and cook for another 10 minutes.

step 2: make the dressing

I have shared my vegan Caesar dressing recipe MANY times for MANY recipes. And there’s a reason I keep going back to it. It is soooooo yummy – and the closest to the real deal I’ve ever had.

I think the capers are what give it that anchovy taste without having to use fish. Even if you don’t like capers (like me), add them to the dressing. You won’t know they are in there!

Add everything to a food processor or blender and blend until smooth.

step 3: assemble & serve

And now we bring it all together!

Add the broccolini, dressing and croutons to a large bowl. Toss until everything is coated.

Spoon onto plates and top with more vegan parmesan. Charred broccolini, crunchy croutons and creamy Caesar dressing. It doesn’t get better than that!

tips & tricks

To make the croutons from scratch, toss 1 cup of chopped bread with 1/2 tablespoon of oil, 1/2 teaspoon garlic powder and a pinch of garlic salt on a baking sheet. Place in the oven at 350 for 20 minutes, tossing halfway.

This is best served right away, but I enjoyed the leftovers chilled in the fridge as well!

Want to add some plant protein to this? Roast a can of chickpeas with the broccolini.

  • 24 ounces broccolini
  • 1 tablespoon oil I used avocado oil
  • 1/4 cup grated vegan parmesan plus more for serving, I used Follow Your Heart
  • salt & pepper to taste
  • 1/2 cup Vegan Caesar Dressing
  • 1 cup croutons see notes

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Trim any thick stems from the broccolini and cut any large pieces in half lengthwise. Add them to the baking sheet with the oil, vegan parmesan and a pinch of salt & pepper. Toss to coat and spread in an even layer. Place in the oven for 15 minutes. Flip and cook for another 10 minutes.
  • Meanwhile, prepare the Vegan Caesar Dressing and set aside.
  • To assemble, add the broccolini, dressing and croutons to a large bowl. Toss to coat. Transfer to plates and top with more vegan parmesan.

Notes
