This Herby White Bean Salad is a simple, protein-packed dense bean salad that doesn’t skimp on flavor. Perfect for meal prep!

Summer is still kicking – it feels like there is no end in sight from this crazy heat! So, recipes like this Herby White Bean Salad are a must! This salad requires no cooking and very little prep. Plus, you can keep it in the fridge for a few days to have an easy meal on hand. Simple, quick and packed with nutrition!

ingredients
- white beans
- oil
- red wine vinegar
- garlic
- red onion
- cherry tomatoes
- chopped herbs – I used parsley, basil & chives
- salt & pepper

You just need a large salad bowl!

steps
step 1: prep
The best part about this recipe is the prep is easy! We’re all about a quick meal right now.
Drain and rinse the beans, dice the veggies and finely chop the herbs.
Add everything to a large salad bowl and toss until everything is combined. Season with salt & pepper, cover and place in the fridge to chill.

step 2: serve
Once the salad is chilled it is time to dig in.

I like to serve this salad with garlic bread on the side, because why not. It is the perfect vessel for the salad.
This is a dense bean salad that is perfect for hot weather and doesn’t disappoint when it comes to flavor!


tips & tricks
This is best served chilled (after all of the ingredients have had time to meld), but you can serve it right away if you need to.
If you are making this for meal prep, separate the salad into individual containers and keep in the fridge for 2-3 days.
Don’t have white beans? Sub with chickpeas instead.

Ingredients
- 2 15-ounce cans white beans drained & rinsed
- 2 tablespoons oil I used avocado oil
- 2 tablespoon red wine vinegar
- 3-4 cloves garlic minced
- 1/2 small red onion finely diced
- 12 ounces cherry tomatoes halved
- 4 tablespoons chopped herbs I used parsley, basil & chives
- salt & pepper to taste
- garlic bread optional, for serving

Instructions
- Add all of the ingredients to a large bowl. Season with salt & pepper, cover and place in the fridge to chill for 30 minutes (or longer).
- Taste and adjust the seasonings as needed.
- Serve with garlic bread on the side.
