If you are looking for a super easy weeknight dinner, this is it! I’m taking my Coconut Rice recipe and adding in a TON of veggies! Broccoli is riced before being stir-fried with onions, garlic, ginger and carrots. By ricing it, it cooks faster and is hidden in with the rice. The rice & veggies are simmered in coconut milk, red curry paste and soy sauce until tender. Serve with your favorite tofu recipe!

How to Make Broccoli Rice

Broccoli rice is incredibly easy to make. Start by grabbing a head of broccoli and cutting it into florets – you could also buy the bagged florets. Add the florets to a food processor and pulse a couple of times. No need to blend it too much.

You can also buy frozen broccoli rice for an even easier clean-up. Just be sure to thaw and press out the liquid before cooking it.

How to Make Coconut Rice

To make the stir-fry, heat some sesame oil in a skillet over medium heat. Add yellow onion, the whites of green onions, carrots, garlic, ginger and the broccoli rice. Let everything cook down for a couple of minutes, stirring frequently.

Pour in coconut milk (from a can), water, soy sauce and red curry paste. Stir until everything is combined and bring it to a boil. Cover, lower the heat and simmer for 20 minutes. All of the liquid should be absorbed and the rice should be tender.

How to Serve

Remove the lid and fluff the rice with a fork. Stir in fresh basil, cilantro and lime juice. Give it a taste and add salt if needed.

Serve the rice hot with the remaining green onion and lime wedges on the side. This would be great served alongside Vegan Mongolian Beef, Bang Bang Tofu or Kung Pao Tofu.

  • Add the broccoli florets to a food processor and pulse until riced.
  • Heat the sesame oil in a skillet. Add the onion, whites of the green onion, carrots, garlic, ginger and broccoli. Cook for 2 minutes, stirring frequently. Pour in the rice, coconut milk, water, soy sauce & red curry paste. Bring to a boil, lower the heat, cover and simmer for 20 minutes.
  • Remove the lid and fluff with a fork. Stir in the basil, cilantro and lime juice. Taste and add salt if needed.
  • Serve hot with the remaining green onion on top.
