Avocado Tomato Salad

This Avocado Tomato Salad is a hearty side dish or appetizer. Best served with tortilla chips for the perfect bite!

The perfect dip or topping, this Avocado Tomato Salad is like a super chunky guac. I have made something similar as a topping for bowls & tacos, but thought it needed its own moment. Because not only can you use this as a topper it is also a great dip. Serve it with tortilla chips for a delicious snack!

- bell pepper
- red onion
- jalapeƱo
- cherry tomatoes
- garlic
- cilantro
- cumin
- smoked paprika
- salt &Ā pepper
- apple cider vinegar
- avocados

steps
step 1: prep
There really isn’t much when it comes to prepping this recipe. It is all about getting your veggies diced.
So, grab a sharp knife and big cutting board and get to chopping the bell pepper, onion, jalapeƱo, tomatoes, garlic, cilantro & avocados.

step 2: assemble & serve
Add all of the chopped veggies, dry seasonings and vinegar to a bowl. Toss everything until combined.

Then you want to gently fold in the avocados. You don’t want to over-mix them or you will end up with guac instead of a salad. So, go slow.
This is best served right away with some tortilla chips on the side.


tips & tricks
I like to use the āteeny tinyā avocados from Trader Joeās. If you use those, you will need 4 avocados. If you use traditional avocados, you will need 2.
This needs to be served right away, otherwise the avocados will brown. If you want to make this ahead of time, add everything but the avocados to the bowl and then add them right before serving.

Avocado Tomato Salad
Ingredients
- 1 bell pepper diced
- 1/2 red onion diced
- 1 jalapeƱo diced
- 1 cup cherry tomatoes halved
- 2 cloves garlic minced
- 2 tablespoons cilantro minced
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon pepper
- salt to taste
- 1-2 tablespoons apple cider vinegar to taste
- 2-4 avocados cubed, see notes

Instructions
- Add all of the ingredients (except the avocados) to a salad bowl. Toss until combined.
- Add the cubed avocados and gently toss to mix them in – be sure not to over-mix or you'll just end up with guacamole.
- Taste and adjust the seasonings as needed. Serve right away with tortilla chips.
