White Bean Noodle Soup

This White Bean Noodle Soup is the perfect swap for chicken noodle soup! It is 100% vegan and great when you want something cozy & comforting!

This White Bean Noodle Soup is on repeat at my house during the colder months. You get the cozy vibes of chicken noodle soup without the chicken (obviously). And using rice noodles makes a huge difference in texture. They really absorb the flavors of the broth and continue to thicken the soup the longer it sits. This is a must make during cold and flu season!
here’s what you need
ingredients
- oil
- yellow onion
- garlic
- carrots
- celery
- Italian seasoning
- poultry seasoning – don’t worry it’s just a seasoning blend, there’s no poultry in it!
- pepper
- white beans
- vegan broth
- vermicelli rice noodles
- fresh parsley
equipment
You just need a large stock pot or dutch oven!

steps
step 1: prep your ingredients
This soup comes together super quickly. It just requires some chopping, breaking (more on that in a second), sautéing and simmering.

After you’ve chopped your veggies, heat the oil in a stock pot over medium heat. Add the onion, garlic, carrots, celery & dry seasonings and cook down for 5 minutes, stirring frequently.
Next we are going to break apart the rice noodles. You can either do this with your hands OR you can put them in a ziploc bag and run a rolling pin over them. You just want them to be in somewhat bite-sized pieces.

step 2: simmer
Pour in the beans & broth and bring to a boil. Pour in the rice noodles, lower the heat and simmer for 10-20 minutes, or until the noodles are cooked.
Give the soup a taste and adjust the seasonings as needed. The broth I use has plenty of salt, so I didn’t need to add any, but you might!


step 3: serve
Ladle the soup into bowls, top with some fresh parsley and enjoy! I also love a drizzle of hot sauce in this soup!

Just know that the longer the noodles sit in the broth, the more liquid they will absorb. I personally love this – the leftovers end up being more like a noodle dish and less like soup. If this isn’t your thing you could always cook the noodles separately and add them to each bowl as you eat!


tips & tricks
To break apart the noodles you can use your hands or put the noodles in a ziploc bag and roll a rolling pin over them.
For a bit of freshness you can also add some lemon juice at the end.
The broth I use is super flavorful so I didn’t need to add extra seasoning or salt, but be sure to taste the soup before serving and adjust as needed.

Perfect soup for the February 2026 New England blizzard. Doubled the broth, veggies and seasoning in order to make enough for the shovelers to enjoy after many shifts. Could have added double the beans and noodles, but didn’t seem necessary. Added salt when adding the other seasonings.
