I’m going to spend my day cleaning the house, meal prepping and watching some football – can you believe the super bowl is almost here?
Be on the lookout for a super bowl recipe round-up soon! Vegans do game day food better than anyone.
But what I really wanted to talk about today is YOU!
You…the TSV readers.
Or as I think of you…the TSV Family!
I wanted to take a moment to say “Thank you”.
Thank you for your constant support.
Thank you for your enthusiasm about all things TSV.
And thank you for always being respectful and positive.
I hear from a lot of you that you find TSV when you are first starting your vegan journey. Which can be an exciting (and scary) time to navigate through.
The vegan community can be an intimidating group of folks.
When I first started my journey I didn’t realize how aggressive some people are about their beliefs.
And that’s really why I created TSV.
I wanted to create a positive space where anyone and everyone who is interested in vegan food is welcome.
I know for me, I was trying vegan food 2 years before I finally made the jump into a permanent lifestyle change.
So, my thinking is that if you can get someone to find at least one vegan recipe they like, the chances that they will try another one increases tremendously.
And I hope that is what I am providing for all of you.
Whether you’re a newbie, a seasoned vet, or just interested in seeing what this whole “vegan-thing” is all about, you are welcome in the TSV Family!
So as our family continues to grow, I look forward to sharing more vegan recipes with all of you. And if you make one of my recipes I LOVE seeing them on social media (Instagram, Facebook, Twitter). The more you share, the more I know what types of recipes you’re interested in seeing.

MONDAY
TheseĀ Vegan Cauliflower Meatballs are perfect for an easy dinner and packed full of healthy ingredients ā plus they taste AMAZING! Serve over pasta with a classic marinara.
TUESDAY
This Asian Chickān Wrap with Spicy Tahini Sauce combines fresh greens, crunchy vegan chicken strips and a tahini dipping sauce that is tangy and delicious.
WEDNESDAY
Have a fancy dinner with minimal work āĀ Vegan Ricotta Stuffed Shells with Creamy Pesto. A baked pasta dish that everyone will love.Ā
THURSDAY
Quick, healthy and filling ā theseĀ Vegan Mexican Salad Wraps with Creamy Avocado Dressing are a packed full of veggies (and requires zero cooking).
FRIDAY
These Vegan Veggie Pita Pizzas take 10 minutes to cook and combine all the great flavors of traditional pizza without the need for any cheese.
Weekly Vegan Dinner Plan #13
Ingredients
PANTRY STAPLES
- olive oil
- Italian seasoning
- salt & pepper
- flour
- soy sauce or tamari
- sriracha
- ginger powder
- red pepper flakes optinal
- nutmeg optional
DRY GOODS
- 1 14 oz can black beans
- 6 large tortillas
- 1 cup oats
- 1/2 cup bread crumbs
- 2 jars marinara
- 1 box large pasta shells
- 2 tbsp soyaki sauce or teriyaki sauce
- 2 tbsp tahini
- hoisin sauce
- 2 slices pita bread
- 8 oz spaghetti optional - for meatballs
PRODUCE
- 2 bell peppers
- 2 red onions
- 1 bunch green onions
- 1/2 cup corn
- 3 jalapeƱos
- 1 bunch cilantro
- 2 cups baby spinach
- 2 cups spring salad mix
- 3 avocados
- 5 basil leaves
- 1/4 cup chives
- 1 lemon
- 1 head garlic
- 1/2 head cauliflower
- 1 large tomato
- 2-4 button mushrooms
REFRIGERATOR/FREEZER
- vegan butter
- 2 cups non-dairy milk
- 3/4 cup vegan pesto
- 8 oz vegan ricotta
- vegan chicken strips
- vegan parmesan optional
- vegan ranch optional

I need help! I keep trying to go Vagan but fail each time I try. Even though I try and eat fat free, sugar free, meat free. Hubby still wants all the things I should stay away from. Beef tacos, cheese enchiladas, fried chicken. So I try and make his meals, and cook vegetables for myself.
Watching everyone else eat. For him everything is from scratch. No frozen or store bought. With all the above, add home cooked beans and spanish rice with most meals… Let’s not forget the corn tortillas. I get away from making home made tortillas.
Now add the cost of adding my food. . I doomed before I start.
Any suggestions?

This is great! I never thought about searching for a weekly menu on Pinterest! How fascinating! Iām new to TSV but looks like youāre definitely a keeper! Love the menu items, and how you incorporated the grocery list as well! Iāve been plant-based going on 4 months soon and I am loving it and how it makes my body feel. However, I do run into moments where Iām so hungry and donāt have to time to think or prepare my next meal so I end up eating junk! Iām so glad I came across this! Thank you, youāre a life saver!
