Vegan Thai Beef Tacos

These Vegan Thai Beef Tacos are an explosion of flavor – filled with soy “beef” crumbles in a Thai-inspired sauce, spicy mayo, avocado & cabbage!

You know there is nothing I love more than a delicious taco. And these Vegan Thai “Beef” Tacos are a fun twist when you want to switch up taco night. Vegan beef crumbles are cooked in a garlicky, gingery, sweet chili sauce. Those are layered on charred tortillas with some red cabbage, avocado, cilantro and spicy mayo. They have the perfect balance of spice and tang. A super delicious vegan dinner!
Step One: Make the Thai “Beef”
This Thai “beef” is going to be your new favorite way to eat vegan beef crumbles. You could use this “beef” in bowls, salads or burritos. It is super versatile and really tasty!
Heat some sesame oil in a skillet over medium heat. Add garlic, onion, ginger and bell pepper. Cook down for 3 minutes, or until the veggies start to get tender.

Add the vegan beef crumbles, sweet chili sauce, soy sauce and pepper. Sauté for 5-10 minutes, or until the beef crumbles start to brown.
The last step to this Thai “beef” is some lime juice and Thai basil. My Thai basil plant was the entire inspiration behind this recipe. It is exploding!! If you don’t have Thai basil (or can’t find it) you can sub Italian basil, or just omit it. But if you can find some, be sure to add it!

Step Two: Prep the Toppings
And while the Thai “beef” is obviously the star of these tacos, the toppings are equally as important, in my opinion.

For the toppings, I used:
- red cabbage
- avocado
- cilantro
- spicy mayo
- lime wedges

The spicy mayo is my favorite – it adds the perfect amount of spice to these tacos! It is also super easy to make. Just add 1 part sriracha to 3 parts vegan mayo. And then obviously adjust the spice to your liking. I always add extra sriracha!

Step Three: Assemble & Serve
And now it is time to assemble! I like to use flour tortillas for these tacos, but you could also use corn. Just be sure you heat up the tortillas before assembling.


To assemble, add cabbage to each tortilla followed by vegan beef, avocado, cilantro and spicy mayo. Be sure to have lots of lime wedges on the side for serving and dig in!
These vegan tacos are great – they are packed with flavor, have plenty of protein and are ready in 30 minutes! Win-win-win!

- 1 tablespoon sesame oil
- 2 cloves garlic minced
- 1/2 red onion diced
- 1 tablespoon fresh ginger minced
- 1 red bell pepper thinly sliced
- 12 ounces vegan beef crumbles see notes
- 1/4 cup sweet chili sauce
- 2 tablespoons low sodium soy sauce
- 1/2 teaspoon pepper
- 1 small handful Thai basil or sub Italian basil
- 1/2 lime juiced, plus more for serving
- 8 taco-sized flour tortillas or sub corn tortillas
- 1/4 head red cabbage shredded
- 2 small avocados sliced
- 1/2 bunch cilantro chopped
- spicy mayo optional, see notes

- Heat the oil in a skillet over medium heat. Add the garlic, onion, ginger and bell pepper. Cook down for 3 minutes, or until the veggies start to get tender.
- Add the vegan beef crumbles, sweet chili sauce, soy sauce and pepper. Sauté for 5-10 minutes, or until the beef crumbles start to brown. Add the Thai basil and lime juice and give it one last stir.
- Heat the tortillas over an open flame or in a skillet. Prepare the spicy mayo – see notes.
- To assemble, add cabbage to each tortilla followed by vegan beef, avocado, cilantro and spicy mayo. Serve with lime wedges on the side.

Notes
- I like the vegan beef crumbles from Trader Joe’s – they are in the refrigerator section.
- To make spicy mayo combine 3 parts vegan mayo to 1 part sriracha.

Just had these tacos for dinner along with an Asian cucumber salad. Delicious! I used a bagged coleslaw mix instead of red cabbage out of convenience and skipped the cilantro. Will definitely be making these again.

These turned out phenomenal!!! Loved the flavors and how quickly they came together. I cut the recipe in half and accidentally used double the sweet chili sauce, but still turned out amazing! Any other recommendations for the vegan meat crumbles?
I like the ones from Trader Joe’s or Gardein!
How long will these hold up as leftovers?
You can store them (unassembled) in the fridge for 4-5 days.
