This Vegan Sausage & Broccoli Orzo Skillet is a one pot, vegan dinner that is ready in 40 minutes! Quick, easy & delicious!

Monday is the perfect day to share this one-pot Vegan Sausage & Broccoli Orzo Skillet recipe! It is a super easy dinner idea that packs everything you need into one dish. You have tender orzo, fiber-rich chickpeas, savory vegan sausage and steamed broccoli. All cooked in a flavor-packed broth. This is going to be on your weekly dinner rotation!
Step One: Brown the Vegan Sausage
I used Beyond Meat Italian sausages for this recipe. They crisp up super nicely and add the perfect bite to this recipe – if you don’t like vegan sausage, check out the recipe notes for other options!

Start by cutting the sausage links into rounds. Heat the oil in a large skillet over medium heat. Add the vegan sausage and cook until browned on both sides (approx. 3 minutes per side).
Remove from the skillet and set aside. Put the skillet back on the stove.

Step Two: Finish it Up
If the skillet is dry you can add a little more oil. Then, add some diced onion, garlic powder, Italian seasoning, smoked paprika & pepper and cook for 2 minutes, stirring frequently. Mix in some tomato paste and cook for another minute.
Pour in the broth (I used vegan chicken broth) and bring to a boil. Add a can of chickpeas & (dry) orzo. Mix, cover, lower the heat and simmer for 10 minutes. Remove the lid, add the sausage & broccoli florets and mix. Cover and cook for another 10-15 minutes.

Step Three: Serve
And that’s it! The cooking time will depend on how cooked you like your broccoli. I like mine with a little bite to it, but if you like yours super tender, then you may want to let it go a little longer.

To serve, spoon everything onto plates and top it off with some fresh parsley and red pepper flakes (if you like some kick).
This is great the night of, but is also perfect for meal prep. I like to store leftovers in individual containers and then you have lunch ready to go!


Tips & Tricks
If you don’t like Beyond Meat sausage, you can sub a different vegan sausage, add an extra can of chickpeas or use tempeh bacon.
The cook time will totally depend on your preference for the broccoli. I like to let my broccoli steam the full 15 minutes.

- 1 pound Beyond Meat Italian Sausage cut in rounds, see notes
- 1 small yellow onion diced
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 2 tablespoons tomato paste
- 2 cups broth I used vegan chicken broth
- 1 cup orzo dry
- 1 15-ounce can chickpeas drained & rinsed
- 12 ounces broccoli cut in florets
- fresh parsley, red pepper flakes optional, for serving

- If the skillet is dry add a little more oil. Add the onion & dry seasonings and cook for 2 minutes, stirring frequently. Mix in the tomato paste and cook for another minute.
- Pour in the broth and bring to a boil. Add the chickpeas & orzo and mix. Cover, lower the heat and simmer for 10 minutes. Remove the lid, add the sausage & broccoli and mix. Cover and cook for another 10-15 minutes (see notes).
- Remove the lid, and make sure the orzo and broccoli is cooked to your liking. If it needs to cook more, add a splash of broth and cover for another 5 minutes. Taste and add salt if needed.
- To serve, add to plates, top with parsley & red pepper flakes and enjoy!

Delightful. I made this with impossible sausage because it’s what I had on hand. I microwaved the sausage because I’m lazy. For me, the broccoli took more like 20 minutes to cook.
This looks very good, but I will make it oil free.
This can definitely be made oil free. Hope you love it!
