Instructions
Heat the oil in a large skillet over medium heat. Add the vegan sausage and cook until browned on both sides (approx. 3 minutes per side). Remove from the skillet and set aside.
If the skillet is dry add a little more oil. Add the onion & dry seasonings and cook for 2 minutes, stirring frequently. Mix in the tomato paste and cook for another minute.
Pour in the broth and bring to a boil. Add the chickpeas & orzo and mix. Cover, lower the heat and simmer for 10 minutes. Remove the lid, add the sausage & broccoli and mix. Cover and cook for another 10-15 minutes (see notes).
Remove the lid, and make sure the orzo and broccoli is cooked to your liking. If it needs to cook more, add a splash of broth and cover for another 5 minutes. Taste and add salt if needed.
To serve, add to plates, top with parsley & red pepper flakes and enjoy!

Notes
If you don't like Beyond Meat sausage, you can sub a different vegan sausage, add an extra can of chickpeas or use tempeh bacon.
The cook time will totally depend on your preference for the broccoli. I like to let my broccoli steam the full 15 minutes.
