Dinner on the table in 20 minutes?! Yes, please! This Vegan Lemon Parmesan Gnocchi has quickly become one of my go-to dinner recipes. It is so quick, packs in so much flavor and is one my whole family loves. You will want to have this one on repeat!

  • lemon zest
  • salt & pepper
  • vegan parmesan
  • dairy-free milk
  • fresh basil

step 1: prep

This recipe moves FAST, so you want to have everything ready to go before cooking!

So, bring a pot of water to a boil and while that is happening, prep the rest of the ingredients.

Zest the lemons, chop the garlic and measure out everything else.

step 2: bring it together

Once the water is boiling, melt the vegan butter in a skillet. Add the gnocchi to the boiling water – cook the gnocchi for 3 minutes, or until they float to the top.

Add the garlic, lemon zest & a pinch of salt & pepper to the skillet. Cook, stirring frequently until the gnocchi is done – turn down the heat if the garlic starts to brown.

Drain the gnocchi and add it to the skillet with the parmesan and a splash of milk. Toss until the gnocchi is coated.

step 3: serve

To finish this off, spoon the gnocchi onto plates and stop with more vegan parmesan. Add some fresh basil and you are ready to eat.

This is best served right away. If you have any leftover you will want to add a little more milk when reheating to loosen up the sauce.

Ingredients

  • 1 pound gnocchi
  • 2 tablespoons vegan butter or sub oil
  • 3-5 cloves garlic minced
  • 2 tablespoons lemon zest approx. 2 lemons
  • salt & pepper to taste
  • 1/4 cup grated vegan parmesan I used Follow Your Heart
  • splash dairy-free milk unsweetened
  • fresh basil for serving

  • Bring a pot of water to a boil. Meanwhile, prep the rest of the ingredients to you can work quickly once the water is boiling.
  • Melt the vegan butter in a skillet over medium heat and add the gnocchi to the boiling water – cook the gnocchi for 3 minutes, or until they float to the top.
  • Add the garlic, lemon zest & a pinch of salt & pepper to the skillet. Cook, stirring frequently until the gnocchi is done – turn down the heat if the garlic starts to brown.
  • Drain the gnocchi and add it to the skillet with the parmesan and a splash of milk. Toss until the gnocchi is coated – add more milk if needed.
  • Transfer to plates, top with more parmesan & basil and dig in!
