This Trader Joe’s 20-Minute Tofu Stir-Fry is a simple and delicious vegan dinner idea. Made in one skillet and packed with veggies & protein!

Today I am back with this Trader Joe’s 20-Minute Tofu Stir-Fry! It requires a handful of ingredients and one skillet. Plus, it is packed with veggies and protein. This stir-fry is perfect for a quick weeknight dinner or meal prepped lunches. I like to serve it over rice with some green onion and sesame seeds on top. You’re going to love it!
Step One: Brown the Tofu
I used high protein tofu for this recipe. And I did this for a couple of reasons:
- You don’t have to press it! It is super dense, so all you need to do to prep this tofu is to drain it and pat it dry.
- It is super high in protein. One block has 70 grams of protein!

Cube the tofu and heat some oil in a skillet. Add the tofu and let it get nice and brown. This should only take a couple of minutes per side. I only brown 2-3 sides.
Once the tofu is done, you can remove it from the skillet.

Step Two: Cook the Veggies
The stir-fry veggie blend from Trader Joe’s is great! It is packed with snap peas, broccoli and cabbage. The cabbage is my personal favorite!

Heat a little more oil in the skillet and add the veggies. Sprinkle on some salt & pepper and cover the skillet.
Let the veggies cook for 3 minutes. You don’t want them to lose all of their crunch. Just cook them long enough to get a little wilted.
Step Three: Make the Sauce
While the veggies are cooking, we are going to put together the Stir Fry Sauce. It just requires 3 ingredients:
- Trader Joe’s Soyaki Sauce
- Trader Joe’s Thai Sweet Ginger Sauce
- corn starch
Combine the sauces and the corn starch and whisk until combined.

Step Four: Finish & Serve
Once the veggies are cooked, add the tofu and sauce to the skillet. Toss until the sauce has thickened and is sticking to the tofu & veggies.

If you are looking for a low carb meal, then you can just serve this as-is. But, you can also serve the stir-fry over rice. To keep this quick, you can use the microwavable rice pouches from Trader Joe’s.
I also like to top mine off with green onion and sesame seeds.
This recipe is great as is, but you can also add things or switch things up to make it your own. If you are looking for a great base recipe for your next stir-fry night, then this is it!
