Comfort food is a must as the weather gets colder and this Vegan Jalapeño Popper Grilled Cheese should be at the top of your list. It is so delicious – especially the parmesan crust on the outside. Please do not skip this step. It is a must!

What Kind of “Cheese” to Use?

If you’ve been around for a while, you know that I am not the biggest vegan cheese person. There are a couple of exceptions, and I used them both in this recipe. For the filling of this sandwich I used vegan cream cheese. It melts well and doesn’t have any funky aftertaste. To give it a little extra flavor I added some garlic powder, onion powder and cumin.

For the outside of the sandwich I used a shredded vegan parmesan. My personal favorite is from Trader Joe’s, but I know there are some other brands out there with a similar flavor. So just use what you like.

The Melt

These sandwiches are pretty simple. The filling is the cream cheese mixture plus sliced jalapeños and red onion. I used sourdough bread. And, of course, buttered the outside of the sandwich.

But the star of the show is the crispy vegan parmesan on the outside of the sandwich. To achieve this, you need to be sure to use a GOOD non-stick skillet. Otherwise you’re just going to have a parmesan mess on your hands. You can see the skillet I used here.

The other key to making this sandwich is to not cook it too quick. You want to give the filling enough time to soften. I find that medium heat worked perfectly to get that brown crust on the outside and a nice gooey inside.

These would be amazing served with a bowl of tomato soup for the perfect Fall dinner.

Ingredients

  • 4 ounces vegan cream cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1-2 jalapeños cut in rounds
  • 1/4 red onion thinly sliced
  • 4 slices bread I used sourdough
  • vegan butter
  • vegan parmesan

Equipment

Instructions
 

  • Combine the cream cheese and spices in a bowl.
  • Butter the outside of each slice of bread. To the inside of one slice add 1/2 of the vegan cream cheese, jalapeños & red onion. Close the sandwich with the butter sides facing out.
  • Heat a non-stick skillet over medium heat. Once hot, add a sprinkle of vegan parmesan down the center with a couple more slices of jalapeños. Place one sandwich in the skillet and gently press it down into the parmesan. Once the parmesan has melted, gently flip the sandwich and brown the other side. Remove from the skillet and repeat with the other sandwich.
