These Vegan Feta Potatoes were a HUGE hit in my house. We were fighting over the leftovers. The potatoes are seasoned and crispy. The red onion & tomatoes add extra veggies and great texture. And the vegan feta takes these over the top. The perfect side dish that the whole family will love!

steps

step 1: crisp the potatoes

First thing we need to do is get the potatoes seasoned and crispy!

Add the potatoes, oil & dry seasonings to the baking sheet and toss to combine. Spread in an even layer and place in the oven for 20 minutes, flipping halfway.

Make sure the potatoes are fork tender before moving onto the next step – if they’re not, put them back in the oven for 5 minutes.

step 2: add more flavor

The reason these roasted potatoes are so addicting is the extra stuff we are going to add to them!

Pull the potatoes out of the oven, add the tomatoes & onion and toss. Move the veggies to the center of the baking sheet and top with the vegan feta. Place the potatoes back in the oven for 10 minutes.

step 3: finish & serve

Pull the potatoes out of the oven, top them with more vegan feta (because, why not), a bunch of fresh parsley and a squeeze of lemon juice.

These roasted potatoes have everything. Crispy, tangy, fresh. They are a showstopper!

tips & tricks

Before adding the vegan feta to the potatoes, you want to move the potatoes into an even pile in the center of the baking sheet. This will just ensure that the feta stays on the potatoes and you don’t lose any to the baking sheet.

Want to add some plant protein? Add a can of drained chickpeas to the baking sheet when you add the tomatoes and onion!
