I am so excited about this Vegan Cranberry Baked Brie! It is the ultimate holiday recipe that you will want to make for your friends & family…or just eat the whole thing yourself! Vegan brie is topped with cranberry sauce & candied walnuts before being wrapped in puff pastry and baked until warmed through. Serve this as is…and just pick away at it with your fingers (my personal favorite) or have some crackers on the side for dipping!

Step One: Prep & Assemble

There isn’t too much prep for this recipe other than finding the vegan brie (more on that below) and thawing the puff pastry.

I used Rebel Cheese for this recipe. I picked it up at the Vegan Market in San Diego. But, you can also check their website for store locators or have it shipped to your house!

To assemble, unfold the puff pastry and cut it into a square big enough to wrap around the cheese – I just did a little trimming off the sides and top.

Place the puff pastry on a parchment-lined baking sheet. Place the brie in the center of the puff pastry. Top the brie with some pre-made cranberry sauce and candied walnuts. Fold the dough over the brie and gently press it down to stick. Brush the dough with melted vegan butter and place in the oven for 20-25 minutes, or until the dough is browned and crispy.

Step Two: Serve

Once you pull the cheese out of the oven, top it with some flakey sea salt and transfer it to your serving platter.

You have a few ways you can serve this. If you’re sharing this with a crowd, then layer the platter with crackers and some sprigs of fresh rosemary (it just looks festive).

But, if you’re eating this alone or with close friends, then I recommend just grabbing a knife and cutting into the puff pastry.

No matter how you eat this, it is so…freaking…good! You won’t regret it!

Tips & Tricks

I haven’t tried this with any other vegan cheeses, but if you are going to substitute the Rebel cheese, then I would pick one that is soft and spreadable.

This isn’t going to be as gooey as a traditional baked brie, because…we’re using vegan cheese! But it will still be warm and delicious!

This is best prepared and served right away – there isn’t really a great way to prep this ahead of time.

Make sure the cheese isn’t sitting out while you prep. Transfer it straight from the fridge to the puff pastry dough. You want it to be cold when it goes in the oven.

Ingredients

  • 1 sheet puff pastry thawed
  • 1 5.6-ounce block Rebel Brie Cheese I used their truffle brie
  • 2-3 tablespoons cranberry sauce I used Trader Joe's
  • 2 tablespoons candied walnuts
  • 1/2 tablespoon vegan butter melted
  • flakey salt

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Unfold the puff pastry and cut it into a square big enough to wrap around the cheese.
  • Place the puff pastry on the prepared baking sheet. Place the brie in the center of the puff pastry. Top the brie with the cranberry sauce and the walnuts. Fold the dough over the brie and gently press it down to stick. Brush the dough with the vegan butter and place in the oven for 20-25 minutes, or until the dough is browned and crispy.
  • Remove the brie from the oven, sprinkle with salt and serve with crackers – or just cut off pieces of the puff pastry and dip it in the cheese.
