Puff Pastry Pesto Pizza Bites

These Puff Pastry Pesto Pizza Bites are the best vegan appetizer. Layers of pizza toppings on puff pastry that is baked until golden.

If you are in need of the cutest, tastiest appetizer, then you need to make these Puff Pastry Pesto Pizza Bites! Puff pastry is layered with pizza toppings – like pesto, marinara, vegan cheese, vegan pepperoni, roasted peppers & basil. Another layer of puff pastry is laid on top of that and the whole thing is cut into tiny squares. Brushed with garlic butter and sprinkled with everything seasoning before being baked until crispy. Serve with extra pesto & marinara on the side for dipping! Perfect for summer parties!
Step One: Prep the Filling and the Dough
Finding vegan-friendly puff pastry is actually super easy. Most pre-made dough is made with oil instead of real butter, so it is a lucky win for vegans. Just be sure to check the label before purchasing.
I like to let the dough thaw out on the kitchen counter for about an hour to 90 minutes. Just be sure not to let it sit out too long. You want the dough to be thawed, but still cold.
For the filling, you have LOTS of options. You can really do whatever your favorite pizza toppings are. I decided to go with pesto, marinara, vegan pepperoni, roasted red peppers, vegan feta and fresh basil.

Step Two: Make the Pizza Bites
Roll out the puff pastry sheets so they are the same size – slightly smaller than the baking sheet. Place one piece of the dough on a parchment-lined baking sheet.



Spread out the vegan pesto to the edges of the dough and top it with dollops of marinara. Add an even layer of pepperoni and top it with the roasted peppers, feta and some fresh basil. Top with the other piece of dough and gently press it down. Use a sharp knife to cut it into 48 squares.
Brush the top of the squares with garlic butter and sprinkle with everything seasoning. Place in the oven for 20-25 minutes, or until golden brown.

Step Three: Serve
To serve these Puff Pastry Pesto Pizza Bites, let them cool slightly after they come out of the oven. Run a knife through the bites to separate them.


You can serve them warm or at room temperature. And you can serve them as is or with extra pesto & marinara on the side for dipping.
TIP: If you have leftovers, you can freeze these. Let them cool completely and transfer to a freezer-safe container. To reheat, place in the oven at 350 for 8-10 minutes, or until warmed through.

- 2 sheets puff pastry thawed
- flour for rolling out dough
- 1/4 cup vegan pesto plus more for serving
- 1/4 cup marinara plus more for serving

- Thaw out the puff pastry – I like to place it on the kitchen counter for about an hour.
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets on a lightly floured surface. Make sure they are roughly the same size – slightly smaller than the baking sheet. Place one piece of the dough on the prepared baking sheet.
- Spread the vegan pesto out to the edges of the dough and top it with dollops of marinara. Add an even layer of pepperoni and top it with the roasted peppers, feta and some fresh basil. Top with the other piece of dough and gently press it down – no need to seal the edges. Use a sharp knife to cut it into 48 squares.

- Combine the melted butter and garlic powder. Brush the garlic butter over all of the squares and sprinkle with everything seasoning. Place in the oven for 20-25 minutes, or until golden brown.

- Remove from the oven, allow to cool slightly and use a knife to cut in between the squares. Serve with extra pesto and marinara on the side for dipping.

Loved the flavor, but they came out a bit greasy. Not as pretty and puffed up as yours. I didn’t measure the ingredients, so maybe I added too much pesto. Would love for them to look as well as they taste. Will keep trying, as they went over well even with my omni friends!
