Combine the soy sauce, gochujang paste, sesame oil, garlic & ginger in a bowl and whisk to combine. Set aside.
Heat the oil in a skillet over medium heat. Add the halved bok choy to the skillet, cut-side down. Cover and steam for 2-3 minutes.
Remove the bok choy from the pan and add the noodles, sauce & whites of the green onions. Cover and steam for 2 minutes. Remove the lid and toss until the noodles are coated. Add a splash of water if needed to loosen the noodles up.
Add noodles and bok choy to each plate. Top with the leftover green onion & sesame seeds. Enjoy!

After cooking the bok choy you can leave it halved or chop it up and add it back to the noodles.
Use less gochujang if you are sensitive to heat.
This is a Trader Joe's recipe, but you can easily sub the ingredients from other stores.
