Heat 1 tablespoon of oil in a large skillet. Add the tofu and spread in an even layer. Cook until browned on 2-3 sides (approx. 2 minutes per side). Remove from the skillet and heat the remaining oil in the skillet.
Add the veggies and a sprinkle of salt & pepper. Toss and then cover for 3 minutes.
While the veggies are cooking, combine the soyaki sauce, ginger sauce & corn starch. Mix until combined.
Add the tofu & sauce to the veggies and continue to toss for a minute or two. The sauce should thicken and stick to the tofu & veggies.
Serve hot over rice topped with green onion & sesame seeds.
