steps

step 1: make the dressing

I know that buying a balsamic vinaigrette at the store is easy, but so is making your own. And trust me, the store bought stuff has nothing on this dressing.

The ingredients are simple – oil, vinegar, dijon, agave, garlic, salt & pepper.

Just add everything to a bowl or jar and whisk (or shake) until combined. Give it a taste and adjust the vinegar, mustard, salt & pepper to your liking.

step 2: assemble

Since we are buying all of the salad ingredients pre-made, the only other thing we have to do is throw it all in a bowl.

Add the shredded brussels sprouts, arugula, vegan feta, candied pecans and dried cranberries to a large bowl. Pour over the dressing and toss until coated.

step 3: serve

The last thing we need to do is serve this up. I like to save a little bit of the pecans, feta and cranberries to put on top of the salad for a pretty presentation, but not necessary if you are short on time.
