Stovetop Vegan Mac & Cheese

This Stovetop Vegan Mac & Cheese is made with 3 kinds of non-dairy cheese, green chiles and dry seasonings. The perfect one-pot recipe!

A little spicy, 100% dairy free, creamy and comforting. This Stovetop Vegan Mac & Cheese is the best comfort food. Made in one-pot, with just a few ingredients. Skip the boxed stuff and give this stuff a try! You won’t regret it!
Step One: Cook the Pasta
Bring broth to a boil. Whether you use veggie broth or vegan chicken broth, the broth will add lots of flavor. Add the pasta and cook for 8 minutes, stirring frequently.
The broth should reduce by about a half, just be sure to keep on stirring.

Step Two: Add the Vegan Cheese & Chiles
So, when it comes to the vegan cheese. Here is what I used:
- vegan cream cheese
- vegan feta
- vegan parmesan
Add add in the rest of the vegan cheese plus the other ingredients and stir, stir, stir. You want everything to be combined and the pasta to finish cooking. Taste and adjust the seasonings as needed.

Step Three: Serve
Dish the pasta into bowls and serve hot. You can top with lots of black pepper and fresh herbs on top.
This vegan one-pot pasta is creamy, decedent and delicious. You’ll want to skip the boxed stuff and give this one a try!

Stovetop Vegan Mac & Cheese
Ingredients
- 4 cups broth I used vegan chicken broth
- 1 pound short cut pasta
- 3/4 cup vegan heavy cream or sub coconut milk
- 8 ounces vegan cream cheese I used Kite Hill
- 4 ounces vegan feta crumbled, I used Trader Joe's
- 4 ounces vegan parmesan I used Trader Joes
- 2 4-ounce cans green chiles see notes
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder
- 1/2 teaspoon cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne optional

Instructions
- Bring the broth to a boil. Add the pasta and cook for 8 minutes, stirring frequently. Do not drain the remaining broth.
- Add in the rest of the ingredients and stir, stir, stir. You want everything to be combined and the pasta to finish cooking. Taste and adjust the seasonings as needed.
- Dish into 8 bowls and serve hot.

Notes
- If you’re sensitive to heat, make sure your green chiles are mild or just use 1 can.

This was really tasty. Only downside is it costs about $20 to make between the vegan cheese and coconut milk
