step 1: make the tots

The ease of this recipe comes from using frozen tater tots. And come on, who doesn’t love a tot?

Add some parchment paper to a baking sheet and spread the tots out in an even layer. Check the package instructions for how to cook them. My package said to cook them for 20 minutes, but I did 30 because I wanted them extra crispy.

When you pull them out of the oven use a heavy glass (or another baking sheet) to smash the tots.

step 2: make the dressing

While the tots are in the oven, we are going to whip up the dressing.

Dice up some celery, red onion, parsley & garlic and add them to a big mixing bowl. Add in the vegan mayo, vinegar, mustard and dry seasonings.

Give everything a mix and taste it. You can adjust the dry seasonings and vinegar to taste at this point.

step 3: assemble & serve

Add the smashed tots to the dressing and give everything a toss.

While this recipe is easy to make, it does need to be eaten right away. If you put this in the fridge the tots will get soggy and absorb the dressing. So, be ready to prepare everything and start eating.

tips & tricks

My tater tot bag said to cook them for 20 minutes. I ended up cooking them for 30 to make sure they were extra crispy!

This is best served right away – if you put it in the fridge the tots will get soggy and absorb the dressing.

  • Line a baking sheet with parchment paper. Spread the tater tots in an even layer on the baking sheet and cook according to the package instructions (see notes).
  • While the tots are cooking, add all of the other ingredients to a large mixing bowl. Stir until combined, taste and adjust the seasonings if needed. Place in the fridge.
  • Pull the tater tots out of the oven and use a flat object to smash them – you can use a thick glass cup, measuring cup or even place another baking sheet on top of the tots.
  • Add the smashed tots to the mixing bowl with the dressing and toss to combine. Serve right away (see notes).
