Sheet Pan Vegan Chicken Fajitas (members only)

These Sheet Pan Vegan Chicken Fajitas are the perfect easy weeknight dinner. Ready in 30 minutes and made on one sheet pan!

I have been on a sheet pan kick lately. I mean, what’s not to love, everything is cooked on one baking sheet (hello, less dishes). And these Sheet Pan Vegan Chicken Fajitas are one of my favorite sheet pan dinners right now. The veggies & vegan chicken are seasoned and roasted until they get a nice char. Delicious and so easy.
here’s what you need
ingredients
- vegan chicken
- bell peppers
- red onion
- avocado oil
- smoked paprika
- cumin
- garlic powder
- chili powder
- dried oregano
- salt & pepper
- lime juice
- cilantro
- tortillas, avocado, limes – optional, for serving

steps
step 1: prep & bake
Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
Add the vegan chicken, bell peppers, onion, oil & dry seasonings to the baking sheet. Toss until coated and spread in an even layer. Place in the oven for 10 minutes. Toss and cook for another 10-15 minutes, or until everything has a nice char.

step 2: serve
Remove from the oven, squeeze over the lime juice and top with cilantro.

I like to serve these in warm tortillas with avocado & hot sauce. But you can load these with up with any of your favorite taco toppings – cabbage, shredded lettuce, salsa, etc.
These are a great family weeknight dinner that everyone will love!

tips & tricks
I prefer to use unbreaded, unseasoned vegan chicken. If yours is frozen, allow it to thaw before adding it to the baking sheet.
Not into vegan chicken? You could do this with tofu or chickpeas too!

- 2 tablespoons cilantro chopped
