Easy Vegan Tortellini & Sausage

This Easy Vegan Tortellini & Sausage is the perfect weeknight dinner! Ready in less than 30 minutes and perfect for a family!

When you are short on time, but want something super delicious, you need to make this Easy Vegan Tortellini & Sausage! It is ready in 25 minutes and is a crowd pleaser – everyone loves this one! Super saucy and delicious!
Here’s what you need
Ingredients
- olive oil
- Beyond Meat Italian Sausage – or sub your favorite vegan sausage
- yellow onion
- garlic
- dried oregano
- dried parsley
- dried basil
- pepper
- tomato paste
- marinara sauce
- vegan tortellini – I used Kite Hill
- fresh basil
- grated vegan parmesan – optional, for serving
Equipment
- skillet
- stock pot

Steps
Step 1: Brown the Sausage
For this recipe I used my favorite vegan sausage – Beyond Meat Italian. But feel free to sub your favorite!
Cooking the vegan sausage is super simple. Heat some oil in a skillet over medium heat. Add the sausage rounds and cook until browned on both sides (approx. 2 minutes per side). Remove from the skillet.

Step 2: Make the Sauce
The reason this recipe is so quick and easy is that the sauce only requires a few ingredients. Plus, we are using some jarred marinara.
Add diced onion, garlic and some dry seasonings to the skillet. Cook down for 3 minutes, stirring frequently. Add tomato paste and cook for 2 more minutes.
Pour in the marinara sauce and bring to a simmer. Cover and simmer for 10 minutes.

Step 3: Cook the Tortellini
If you haven’t tried the Kite Hill Tortellini…prepare to have your mind blown! It is seriously so good!
And, it is super easy to cook. All you need to do is bring a pot of water to a boil, add the tortellini and let it boil until the little guys float to the top. That’s when you know it is done.
Drain the tortellini, and let’s finish this thing.

Step 4: Finish it Up
Now, we are bringing everything together. Add the sausage, tortellini and some chopped fresh basil to the sauce and give everything a mix.

Taste everything and adjust the seasonings as needed – I didn’t need to add salt since my pre-made marinara had some in it, but now would be the time to add it if you need it.
To serve, spoon the tortellini, sausage and sauce into bowls and top it off with grated vegan parmesan. Grab a fork and dig in!


Tips & Tricks
This is a very saucy dish. You could always double the tortellini or make less sauce if you prefer less sauce.
Sub your favorite vegan sausage if you don’t like Beyond Meat. Or leave it out altogether.
You can add some greens by throwing in some spinach at the end and letting it wilt.
Can’t find Kite Hill tortellini? Trader Joe’s also makes a vegan ravioli. You could also sub plain pasta.

So easy and delicious! Great easy weeknight dinner.
This was so good and easy! I realized my dried parsley was super expired, so I just used Trader Joe’s Aglio Olio Garlicky & Spicy Seasoning Blend in place of all the spices, and it worked out great! Will be making this one again. Thank you!
