    Are you ready to take the ultimate classic sandwich and vegan-ize it? Because, yes it can be done, and yes, it is super easy to do.

    For this recipe all you need to do is whip up a couple TSV classics, put them in a bun and get to eating.

    For the meatballs you can make them well in advance and have them ready to go in the freezer when it is time to eat. My Vegan Cauliflower Meatballs not only taste good, they also sneak even more veggies into this sammie.

    You could definitely opt for the frozen vegan meatballs at the store, but if you have the time I would make your own. They will not only taste better, they will be made with fresh ingredients and free of preservatives.

    TSV TIP: No need to thaw your meatballs either. Simply give them a quick pan fry until browned on all sides and heated through.

    For the sauce, you have a couple of options. Either make your own sauce, or buy it in the jar. OR you can do a little of both and make my 10 Minute Vegan Marinara. This marinara has a little more "umph" than just using the stuff out of the jar, and it only requires a couple extra ingredients.

    When it comes to the bread, I went with french rolls that I cut in half. But you could leave them whole and make these big 'ol sandwiches. You can also swap out the bread for something different entirely. Totally up to you.

    Just remember, you gotta toast your bread. With all of that good sauce going on, you need a toasty bread to keep the sandwich from falling apart.

    Lastly, if you're into vegan cheese, you could melt some slices on top or even sprinkle on some vegan parm. I went the classic route, and skipped the extras. There is already so much good flavor going on, why muddle it with extras? Just my opinion.

    These would be great to serve at a party as an appetizer or as the perfect size sammie for a kid.

    Mini Vegan Meatball Subs

    Cauliflower meatballs are tossed in a simple marinara sauce before being layered in toasted rolls to make these Mini Vegan Meatball Subs. Great for parties!
    Prep Time 10 minutes
    Cook Time 20 minutes
    Total Time 30 minutes
    Servings 4 mini subs

    Ingredients

    • 1-2 cups vegan marinara*
    • 8 vegan meatballs**
    • 1 tablespoon olive oil
    • 2 large french rolls cut in half
    • fresh basil optional

    Instructions

    • If making my 10 Minute Vegan Marinara Sauce, prepare according to instructions and place on low heat until ready to use. 
    • Prepare meatballs ahead of time and freeze. Heat olive oil in a pan over medium heat and pan fry meatballs until they are browned on all sides and warmed through. 
    • While meatballs are cooking, toast bread. 
    • To assemble, place 2 meatballs in each roll and top with desired amount of marinara sauce. 
    • Top with fresh basil and serve immediately.

    Notes

    *I used my 10 Minute Vegan Marinara Sauce in this recipe. You can use your favorite homemade or store bought sauce. Just be sure to heat it up in a pan before serving. 
    **I made my Vegan Cauliflower Meatballs in this recipe. If you plan to do the same, you should make them at least an hour in advance so they have time to freeze. You can also use a store bought brand - check your store's freezer section for options.
