If you are looking for a pizza that embodies all of summer’s best flavors, then you need to try this Burst Tomato Pizza! Instead of a traditional sauce, we are using burst tomatoes. Which are then topped with vegan mozzarella, pesto & lots of fresh basil. This pizza is light, but packed with flavor!

here’s what you need

ingredients

  • pre-made pizza dough
  • oil
  • cherry tomatoes
  • garlic
  • shallot
  • oregano
  • salt & pepper
  • vegan pesto – I used Trader Joe’s
  • shredded vegan mozzarella – I used Daiya
  • fresh basil

equipment

You will need a skillet and a baking sheet to bake the pizza on!

steps

step 1: prep

Since we are using a pre-made dough, the first thing you want to do is let it come to room temperature – that way you will be able to stretch it out.

Add some oil to the pizza dough and place in a bowl for at least 30 minutes – or until it comes to room temperature.

Next up is the tomatoes. Heat the oil in a skillet over medium heat. Add the tomatoes, garlic, shallot & dry seasonings to the skillet and cook down until the tomatoes start to burst. Be sure to stir frequently so the garlic doesn’t burn. Drain off some of the oil and set aside.

step 2: assemble & bake

Stretch out the dough and place it on the baking sheet. Add 1/2 of the tomatoes to the dough and spread out in an even layer. Sprinkle on the cheese and then top with dollops of pesto and finish with the remaining tomatoes.

Place in the oven until the crust is browned and the cheese is melted.

step 3: serve

When you pull this pizza out of the oven the cheese should be melted, the tomatoes should be bubbly and it should smell amazing!

I like to slice it up and then top with LOTS of fresh basil.

tips & tricks

You could also roast the tomatoes – just add everything to a baking dish and roast for 15-20 minutes, or until they burst.

Most pre-made pizza dough is vegan. Just be sure to check the label first!

  • 1 pound pre-made pizza dough
  • oil I used avocado oil
  • 12 ounces cherry tomatoes
  • 2 cloves garlic minced
  • 1 shallot sliced
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 cup vegan pesto I used Trader Joe's
  • 1 cup shredded vegan mozzarella I used Daiya
  • fresh basil

  • Add some oil to the pizza dough and place in a bowl for at least 30 minutes – or until it comes to room temperature.
  • Preheat the oven to 450 degrees and grease a baking sheet (I used a round pizza baking sheet).
  • Heat 1 tablespoon of oil in a skillet over medium heat. Add the tomatoes, garlic, shallot & dry seasonings to the skillet and cook down for 10 minutes, or until the tomatoes start to burst. Be sure to stir frequently so the garlic doesn't burn. Drain off some of the oil and set aside.
  • Stretch out the dough and place it on the baking sheet. Add 1/2 of the tomatoes to the dough and spread out in an even layer. Sprinkle on the cheese and then top with dollops of pesto and finish with the remaining tomatoes. Place in the oven for 15-20 minutes, or until the crust is browned and the cheese is melted.
  • Remove from the oven, slice and top with fresh basil. Enjoy!
