Add some oil to the pizza dough and place in a bowl for at least 30 minutes - or until it comes to room temperature.
Preheat the oven to 450 degrees and grease a baking sheet (I used a round pizza baking sheet).
Heat 1 tablespoon of oil in a skillet over medium heat. Add the tomatoes, garlic, shallot & dry seasonings to the skillet and cook down for 10 minutes, or until the tomatoes start to burst. Be sure to stir frequently so the garlic doesn't burn. Drain off some of the oil and set aside.
Stretch out the dough and place it on the baking sheet. Add 1/2 of the tomatoes to the dough and spread out in an even layer. Sprinkle on the cheese and then top with dollops of pesto and finish with the remaining tomatoes. Place in the oven for 15-20 minutes, or until the crust is browned and the cheese is melted.
Remove from the oven, slice and top with fresh basil. Enjoy!
Notes
You could also roast the tomatoes - just add everything to a baking dish and roast for 15-20 minutes, or until they burst.
Most pre-made pizza dough is vegan. Just be sure to check the label first!
