What’s in my Freezer: Pregnancy Prep

Take a peek inside my freezer to see what I prepped for post-baby! I have a mix of homemade meals and some fun vegan frozen finds!

As I sit here 38 weeks pregnant waiting for baby to make his appearance, I thought it would be fun to share what meals I’ve prepped for post-pregnancy.
I am the one who primarily cooks in my house – my husband would love me to let him get in there, but I’m a little too much of a control freak. When it comes to the grill, that is all him. But, the kitchen is mine. So, while he is more than happy to hop in the kitchen once baby is here, I wanted to have lots of meals ready to go to make the first couple weeks a little easier.
One thing I didn’t have on my pregnancy bingo card was third trimester carpal tunnel – basically my hands are numb all day at this point. Which makes it super hard to cook! Luckily, I have been freezing meals over the last couple months and have us pretty stocked up.
Most of the things I made I already have a recipe for here on TSV, but for anything I made that doesn’t have an official recipe, I’ll share the details!
Whether you’re expecting, or just looking for a little freezer-friendly meal inspo, I hope this list is helpful! This is by no means a picture-perfect freezer – I organized and stuffed everything in there as best as I could.

Breakfast

Lately I’ve been on a bagel kick. So once baby is here I plan to have bagels on tap. I like to do cinnamon bagels with peanut butter or everything bagels with Just Eggs, avocado, everything seasoning and hot sauce.

As for the freezer, here is what I have:
frozen bananas for smoothies
Protein shakes are something my husband and I make on a regular basis, so having some frozen bananas on hand was a must. My typical shake has vegan protein powder, oat milk, peanut butter, cinnamon & one frozen banana.
I love this little blender to make smoothies in – it is so much easier than getting the big blender out!

breakfast sandwiches
Who doesn’t love a breakfast sandwich?! These were super easy to prep and they are packed with plant protein for a super filling breakfast! You can really do whatever filling you like, but I went with some tofu sautéed in oil, turmeric, garlic powder, salt & pepper. Just press the tofu and slice it into rectangles. Mix up the oil and dry seasonings (I just eyeballed it) and cook in a pan until crispy on both sides.
Once the tofu is done, I also cooked up some vegan breakfast sausage patties. I got mine at Trader Joe’s. Just use the same pan and cook until crispy on both sides.
Grab some English muffins and layer the tofu, vegan sausage and vegan cheese. Close them up and wrap in foil. I like to reheat mine in the air fryer at 370 for 7-8 minutes. You could also pop them in the microwave for a couple minutes.

I have had this vegan egg muffin recipe on my site for a few years now. It is a great one for meal prep. And you can switch up what you add to them each time. Plus, they are super easy to reheat!

Lunch/Dinner
I didn’t really designate lunches and dinners. I like to keep tempeh bacon on hand for easy TTLA sandwiches – one of my favorite at home sandwich recipes! So we will probably be eating sandwiches pretty regularly for lunch.

And I expect we will also be eating leftovers from my freezer dinners. Here is what is in the freezer:
vegan lasagna
My vegan lasagna recipe is one I come back to ALL THE TIME! It is the perfect recipe for a party or a cozy dinner. Or, a freezer meal! I prepped a couple of lasagnas to get ready for baby. Not only is this lasagna super delicious, one tray will feed my husband and I for a few days – and I made 2 trays! Well, I made 3, but I gave one to my sister-in-law.

cheesy zucchini penne
Another easy one to freeze is my Cheesy Zucchini Penne recipe! Prep the recipe as written, let it cool, then pop it in a freezer-safe container. I just did ziploc bags to save space, but a casserole dish works great too. I plan to reheat this in a skillet. Just pop the whole thing (frozen) in a hot skillet and toss it until warmed through.

harissa chickpeas
Another great freezer-friendly recipe is my Coconut Harissa Chickpea Skillet. Prep the recipe, let it cool and then transfer to a freezer-safe container. To reheat, add the frozen chickpeas to a hot skillet, prep some rice for the side and you are good to go!

tofu stir-fry
Another easy one to prep is tofu stir-fry. I have an actual recipe you can check out here, but here is how I threw my bags together. I just drained and pressed a block of firm tofu. Cube it and add it to a bag with 2 chopped bell peppers, 1 chopped onion and 1/2 a bottle of soyaki sauce. To reheat, you can add everything to a hot skillet and cook until heated through. Prep some rice on the side and that’s it!

The last thing I prepped are some vegan burger patties. You can get my patty recipe here. I figured these would be easy for my husband to throw on the grill and we’ll just prep some burger toppings, and obviously, have some chips on the side!
Fun Foods
In addition to everything I’ve prepped, I’ve also been strolling the frozen aisles of Trader Joe’s and Ralphs for some fun freezer food. I only grabbed a couple of things, but I’m sure I will send my husband to the store to see what else he can find once baby is here.

And that’s it. That is everything I have ready. I have no clue if it is too little or too much, but our freezer is beyond packed, so there’s not much room for anything else at this point. Let me know if you have any favorites that I missed!

Maybe some soups?
Yes! I think soups would be a great addition. We unfortunately have run out of space lol Plus it’s July so soup hasn’t been a top craving in this heat. If I were giving birth in fall or winter I think it might have been all soups!
