Vegan Peppermint Latte

I had a revelation this weekend…and it was about my love for peppermint lattes – so profound, right?
In high school I was all about the white peppermint mocha from starbucks. Now these obviously aren’t vegan, but they’re also wayyyyyyyyyyy too sweet for me nowadays.
So, take away the white chocolate and add in some non-dairy milk and you have a tasty holiday drink. Plus you can make it at home for a fraction of the price.
Just like with my Pumpkin Spice Latte I shared with you, we are keeping this simple by using instant coffee. I like Nescafe, but you can use whichever brand you prefer. You can also make this hot or cold – I always go cold, but that’s just me.
Vegan Peppermint Latte
Ingredients
- 1 cup almond milk
- 1 nescafe instant coffee packet
- 1-2 drops peppermint extract or more to taste
- sugar to taste
- ice optional
Instructions
- FOR ICED LATTE: Add all of the ingredients (except the ice) to a mason jar. Put on lid and shake until sugar and coffee has dissolved and an inch of foam has formed at the top (approx. 30 seconds). Add ice and serve.
- FOR HOT LATTE: Add all of the ingredients (except the ice) to a mason jar. Put on lid and shake until sugar and coffee has dissolved and an inch of foam has formed at the top (approx. 30 seconds). Transfer to a microwave safe mug and microwave until warm.
