Vegan Iced Pumpkin Spice Latte

Ya, I know…pumpkin spice lattes are “so 5 years ago”. But call me a basic bitch, because I still like them. And since the one at Starbucks is not vegan-friendly, I’ve figured out the perfect recipe to make a Vegan Iced Pumpkin Spice Latte at home.
You just need a couple of ingredients, and BEST part is…you don’t even have to brew any coffee.
One week while at Target I decided to try some nescafe instant coffee – mostly because it was the cheapest thing on the shelf. To my total surprise, it was really good. And I still buy it. At $1 for 5 packets, you can’t beat the price. And just having to add water or milk without any brewing or straining is an added bonus.
And why “iced” you may ask? One thing about me is I am not fond of hot coffee. It could be raining like crazy and I will still get my coffee iced. So while you could easily make this recipe hot, you won’t find me drinking it that way.
I also really like making this in a mason jar. Add everything to the jar except the ice, put the lid on and shake it up. It creates an amazing foam and dissolves the sugar & coffee all at once. Just add the ice and a straw and you have a super tasty drink at a quarter of the price.

Vegan Iced Pumpkin Spice Latte
Ingredients
- 1 cup almond milk
- 1 nescafe instant coffee packet
- 1/4 tsp. pumpkin pie spice
- 1/4 - 1/2 tsp. sugar to taste
- ice
Instructions
- Add all of the ingredients (except the ice) to a mason jar. Put on lid and shake until sugar and coffee has dissolved and an inch of foam has formed at the top (approx. 30 seconds).
- Add ice and serve.
