Vegan Chipotle Beef Tacos

These Vegan Chipotle Beef Tacos are ready in 20 minutes and are a crowd pleaser. Perfectly smoky, packed with protein & delicious!

You know I loveeeee a taco night. And it is even better when they only take 20 minutes to make! These Vegan Chipotle Beef Tacos are a must make! They are smoky, a little spicy and super easy. Topped with guac for a simple taco that doesn’t disappoint on taste. These are going to be on your regular rotation!
Here’s what you need

- avocado oil
- yellow onion
- vegan beef crumbles – see the recipe notes for other options
- garlic powder
- smoked paprika
- cumin
- chili powder
- salt & pepper
- chipotles in adobo
- limes
- cilantro
- corn tortillas
- guacamole

Steps
Step 1: Make the Chipotle “Beef”
I know that vegan beef crumbles aren’t everyones thing, but I think they are great. They are typically a soy product and they really take on whatever flavors you add to them.
Start by heating the oil in a skillet over medium heat. Add 1/2 of the diced onion and cook down for 2 minutes. Pour in the beef crumbles, dry seasonings and chipotles.
Cook for a couple of minutes – you want the beef crumbles to get a little char. Pour in 1/3 cup of water and lower the heat. Simmer for 10 minutes, stirring frequently.

Step 2: Make the Toppings
I decided to keep the toppings for these tacos super simple. Sometimes simple is best.
The first thing you want to throw together is some onions & cilantro. Such a simple topping that adds so much great flavor. Just toss onions, cilantro & lime juice together. Yep, that’s it!
I also made a homemade guacamole. But you could totally go the easier route and and buy something pre-made from the store!

Step 3: Assemble & Serve
Before we bring it all together, we are first going to finish off the vegan beef. Just add some diced cilantro & lime juice and give it one last mix. Give it a taste and add salt if needed.

You also want to heat up your tortillas. I like to do this over an open flame, but you could also do this in a skillet.
And now…we assemble. Layer each tortilla with some vegan beef, onion & cilantro and a dollop of guacamole. If you want some extra spice, add some hot sauce. And make sure to have extra lime wedges on the side.
These tacos are everything you could want. Simple, tasty and quick!


Tips & Tricks
I used thawed vegan beef crumbles from Trader Joe’s. You can also use frozen beef crumbles, just adjust the cooking time as needed. If you don’t like vegan beef crumbles, just sub cooked lentils.
Adjust the amount of chipotle you use based on your spice preference.
For homemade guacamole, mash 2 small avocados and add 2 tablespoons diced yellow onion, 1 lime juiced, 2 tablespoons chopped cilantro, salt & pepper. Mix until combined, taste and adjust as needed.

- Meanwhile, add the remaining onions to a bowl with 1/2 of the cilantro and the juice of 1 lime. Mix until combined and set aside.
- Add the remaining lime juice & cilantro to the vegan beef, toss and taste. Adjust the seasonings as needed.
- Heat the tortillas (over an open flame or in a skillet). To assemble, layer each tortilla with vegan beef crumbles, a spoonful of onions & cilantro and a dollop of guacamole. Serve with lime wedges on the side.

This was such an easy but flavorful and filling meal. I used Abbot’s ground beef and also added pico along with the guac. Will make again for sure.
