High Protein Quinoa Enchilada Casserole (members only)

This High Protein Quinoa Enchilada Casserole is perfect for meal prep! Everything is cooked in one pot and each serving has 20+ grams of plant protein!

The idea for this recipe came from my son. He is 1 and one of my favorite ways to get him extra protein is to sneak tofu into his meals. It adds creaminess and plant protein – it is a win-win. And this High Protein Quinoa Enchilada Casserole is the adult version of that same concept – we’re just adding more seasoning and some heat to spice it up! It is perfect for meal prepped lunches!
here’s what you need
ingredients
- oil
- jalapeƱo
- yellow onion
- bell peppers
- cumin, chili powder, chipotle chili powder, smoked paprika, salt, pepper
- firm tofu
- red enchilada sauce
- black beans
- quinoa
- corn tortillas
- vegan Mexican cheeseĀ – I used Daiya
- avocado, cilantro, hot sauce, vegan yogurtĀ – optional toppings

You’ll want to use an oven-safe pot (or cast iron skillet) and a blender!
steps
step 1: prep the veggies & sauce
The most labor intensive part of this recipe is chopping. Grab your veggies and get everything chopped ahead of time so you are ready to go!
Heat the oil in an oven-safe pot (or large cast iron skillet) over medium heat. Add the veggies & dry seasonings. Cook down for 5 minutes, stirring frequently.
While the veggies are cooking we’re going to make our tofu sauce – aka sneaky protein sauce.
All you have to do is add your tofu and enchilada sauce to a blender. Blend until smooth and you’re done!


step 2: finish & bake
Add the tofu mix, beans & quinoa to the pot with the veggies and stir. Bring to a boil, cover, lower the heat and simmer for 25 minutes, stirring every 5 minutes so the quinoa doesn’t stick.
Turn off the heat. Top the casserole with the tortillas and sprinkle on the cheese. Place in the oven (uncovered) for 10 minutes, or until the cheese is melted.

step 3: finish & serve
To finish off the casserole I like to add LOTS of toppings. So feel free to go crazy for this part.

Some of my favorite toppings are cilantro, green onion, vegan yogurt, avocado, hot sauce, & cabbage!
Spoon the casserole onto plates and you are ready to dig in. This recipe is filling, healthy & delicious!


tips & tricks
The tortillas and cheese are optional ā if you want to skip the baking step, just omit them.
You can sub green enchilada sauce for the red.
Play around with the spices ā if you are making this for kids, omit the chipotle chili powder.

Ingredients
- 2 tablespoons oil I used avocado oil
- 1 jalapeƱo diced
- 1/2 large yellow onion diced
- 2 bell peppers diced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 14-ounce block firm tofu drained & rinsed
- 24 ounces red enchilada sauce
- 2 15-ounce cans black beans drained & rinsed
- 1/2 cup white quinoa rinsed
- 4 corn tortillas
- 1 cup shredded vegan Mexican cheese I used Daiya
- avocado, cilantro, hot sauce, vegan yogurt optional toppings

Instructions
- Preheat the oven to 400 degrees.
- Heat the oil in an oven-safe pot (or large cast iron skillet) over medium heat. Add the veggies & dry seasonings. Cook down for 5 minutes, stirring frequently.
- While the veggies are cooking, add the tofu & enchilada sauce to a blender. Blend until smooth.
