Caprese Flatbread (members only)

This Caprese Flatbread is a simple meal that packs in a ton of flavor. It is cheesy (and dairy-free), crispy, and simply delicious!

I love a quick and easy meal and this Caprese Flatbread requires 6 ingredients and 20 minutes! It doesn’t get much easier than that. The “cheese” is melty, the flatbread is crispy & the tomatoes add the perfect fresh bite. With a drizzle of balsamic glaze and some fresh basil on top, these are the perfect snack, lunch or dinner.
here’s what you need

- flatbread
- dairy-free Boursin – or sub your favorite vegan cheese
- cherry tomatoes
- balsamic glaze
- fresh basil
- pepper

You just need a baking sheet and some parchment paper!

steps
step 1: assemble & bake
Assembling these flatbreads just takes a couple of minutes. To start, line a baking sheet with parchment paper.

Place your flatbreads on the baking sheet and spread on a layer of Boursin – as you may have noticed, I love using this stuff! It is super cheesy and garlicky!
Top the “cheese” with your halved cherry tomatoes and pop the whole thing in the oven.

step 2: finish & serve
Once the flatbreads are crispy & the cheese is melted, pull them out of the oven.
Drizzle on the balsamic glaze and add some fresh basil & pepper. That’s it! Slice these up and enjoy! These are seriously the easiest snack or quick dinner!


tips & tricks
When it comes to the flatbreads, you can really use whatever you want – pita, naan or a pre-made pizza crust. Just be sure to adjust the cooking time if needed!
Be sure to use balsamic glaze and not balsamic vinegar! Different textures & flavors.
If you are making these for an appetizer, I would cut them and then add the balsamic glaze/basil – they will look prettier that way!

- 5 ounces dairy-free Boursin or sub another vegan cheese
- 1 cup cherry tomatoes halved
- balsamic glaze see notes

Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Place the flatbreads on the baking sheet. Spread an even layer of Boursin on them and then top with the halved tomatoes. Place in the oven for 10 minutes, or until the flatbread is crispy & the cheese has melted.
- Remove from the oven, top with balsamic glaze, fresh basil and pepper. Slice and enjoy!
