These Buffalo Chickpea Ranch Wraps are the perfect vegan lunch on the go! Buffalo chickpeas, vegan ranch & veggies wrapped in a tortilla!

It is officially back to school season…am I the only one in shock? I swear this summer went by so fast! And typically I post some back to school lunch recipes to kick off the season. We’re starting with these Buffalo Chickpea Ranch Wraps! They are layered with saucy buffalo chickpeas, vegan ranch, avocado and crunchy veggies. Easy to take on the go, filling and protein-packed!
Step One: Make the Vegan Ranch
If you are making vegan ranch from scratch (which I recommend), you’ll want to whip that up first.

To a bowl add some vegan mayo, vegan yogurt, alllll the typical ranch dry seasonings and some apple cider vinegar. Mix, mix, mix and that is it!
The main thing you want to remember when making this ranch is that it is ok to play around with the seasonings! Make it your own. I personally love a lot of vinegar in mine, so I go heavy handed.

Step Two: Make the Buffalo Chickpeas
The buffalo chickpeas are super easy to make – and you’ll honestly want to put them on everything.
Heat a little oil in a skillet over medium heat. Add a can of drained & rinsed chickpeas, garlic powder, onion powder, smoked paprika & pepper. Cook for 2-3 minutes, or until the chickpeas start to char. Pour in some buffalo sauce and cook for another 2-3 minutes.
The chickpeas should start to brown and be nice & saucy.

Step Three: Assemble
To assemble the wraps, grab a large flour tortilla (or your favorite wrap) and layer on the chickpeas, avocado, red onion, romaine, cilantro and ranch.

Tuck the sides of the tortilla in and roll it up. Slice in half and you are ready to eat.
These wraps have the perfect balance of spice & creaminess. The crunch from the veggies is refreshing. And the avocado adds some healthy fat. These wraps are balanced, delicious and simple!

Tips & Tricks
I used super large flour tortillas. If you use smaller wraps, you will be able to make 4 wraps.
If making these ahead of time, leave the ranch on the side so the lettuce doesn’t wilt.

Ingredients
- 1 teaspoon avocado oil
- 1 15-ounce can chickpeas drained & rinsed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon pepper
- 1/4 cup buffalo sauce
- 2 large wraps
- 1 avocado sliced
- 1 head romaine chopped
- 1/4 red onion sliced
- 4 tablespoons cilantro
- 4 tablespoons vegan ranch see notes

- Heat the oil in a skillet over medium heat. Add the chickpeas & dry seasonings and cook for 2-3 minutes, or until the chickpeas start to char. Pour in the buffalo sauce and cook for another 2-3 minutes. Remove from the heat.
- To assemble, layer each wrap with chickpeas, avocado, red onion, romaine, cilantro and ranch. Roll up the wraps and cut in half.

- To make homemade vegan ranch: combine 1/2 cup vegan mayo, 1/4 cup vegan yogurt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried chives, 1/2 teaspoon dried parsley, 1/4 teaspoon dried dill, 1/4 teaspoon pepper, 1-2 tablespoons apple cider vinegar.
