This delicious Broccoli Rice White Bean Summer Salad is a healthy combo of veggies and beans tossed in a creamy tahini dressing. Serve this in place of coleslaw at your next BBQ.
Summer is a time for parties, sun and of course...food.
And while salads can sometimes be a snooze fest, this Broccoli Rice White Bean Summer Salad is anything but.
Ya, ya, it is super healthy.
And ya, ya, it has tons of fiber and protein.
BUT, most importantly it tastes AMAZING.
Imagine traditional coleslaw with none of the heavy mayo, tons of yummy flavors and all of the crunch you could ever dream of.
Now you may be confused when you don't see rice in the ingredient list, because today we are working with broccoli rice. "What it broccoli rice?" you say. Remember how cauliflower rice was all the rage a couple years ago? Well, it is time for cauliflower to step aside and welcome the new star of the show to the stage. Broccoli rice!
Basically broccoli blended up until it is about the size of rice. I know, its pretty straight forward.
While I'm not a big fan of raw broccoli florets...when it is super duper tiny like this, it really doesn't need to be cooked. Again, we're going for the crunch factor here.
I buy my broccoli rice pre-made at Trader Joe's (other grocery stores sell it too), but you could make your own by buying a head of broccoli and running it through a food processor.
Now, for the dressing, we are going to use my Spicy Tahini Dressing. This stuff isn't super spicy by any means. It just has a subtle kick from the jalapeño. If you don't like spice at all you could totally swap it out for my other tahini dressing that doesn't have any spice.
This salad holds up really well, even after you add the dressing. It stayed crunchy for 5 days in my fridge! (Just be sure to hold off from adding the avocado until serving, because that will definitely brown).
Serve this at your next BBQ - it goes great with burgers, hot dogs...basically all the BBQ foods.
Broccoli Rice White Bean Summer Salad
- 2 cups broccoli rice
- 1 bell pepper diced
- ½ red onion diced
- 1 jalapeño
- 15 oz can white beans drained and rinsed
- 1 avocado diced
- Spicy Tahini Dressing*
- ½ lemon juiced
- pepper to taste
- Prepare Spicy Tahini Dressing according to instructions and set aside.
- Combine the remaining ingredients in a bowl and top with dressing. Toss to combine.
- Squeeze lemon juice over the salad and add some fresh cracked pepper.
- Serve immediately or place in the fridge until ready to eat.
