This Baked Spaghetti Bolognese is one of those simple and DELICIOUS comfort food recipes that you will want to make all the time! Everything is made in one pot. The sauce is a simple combo of vegan meat and marinara. And the cheesy topping brings it all together. You need to give this a try!

Step One: Cook the Vegan Meat

I know everyone isn’t a fan of vegan meats. But I think that the addition of Impossible ground “beef” adds so much flavor. And honestly, kind of makes the dish. If you absolutely can’t have it, then go ahead and omit it.

Heat the oil in an oven-safe stock pot over medium heat. Add the vegan meat and crumble with a wooden spoon. Season with a pinch of salt & pepper and cook until mostly browned.

Add the onion, garlic, Italian seasoning, red pepper flakes & sun-dried tomatoes and cook for another 3 minutes, stirring frequently.

Step Two: Add the Sauce & Spaghetti

The best part about this recipe (other than it tasting delicious) is that everything is made in one pot – even the spaghetti!

Pour the marinara sauce and some water into the stock pot and increase the heat. Once the sauce starts to gently boil, add in the spaghetti – break it in half if the spaghetti doesn’t fit. Cook for 10 minutes, stirring regularly so the pasta doesn’t stick.

Step Three: Bake

Pour in some non-dairy cream and stir to combine – the spaghetti should not be completely cooked at this point. Remove from the heat and top with vegan parmesan and crumbled vegan feta.

Cover and place in the oven for 15 minutes. Remove the lid and cook for another 10 minutes. Turn the oven to broil and allow the cheese to get slightly browned on top – usually takes 2 minutes, but keep an eye on it so it doesn’t burn.

Step Four: Serve

Remove the stock pot from the oven and take a second to embrace the delicious smells coming from it. Then top it off with some fresh basil and grab a big spoon to start scooping out that yumminess.

Ingredients

  • 2 tablespoons olive oil
  • 12 ounces vegan beef I used Impossible ground "meat"
  • salt & pepper to taste
  • 1 yellow onion diced
  • 5 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • red pepper flakes to taste
  • 2 tablespoons sun-dried tomatoes roughly chopped
  • 1 28-ounce jar marinara
  • 2 cups water
  • 1 pound spaghetti dry
  • 1 cup non-dairy cream or sub non-dairy milk
  • 2 ounces vegan parmesan I got mine at Trader Joe's
  • 4 ounces vegan feta crumbled, I got mine at Trader Joe's
  • fresh basil for serving

  • Preheat the oven to 375 degrees.

  • Pour in the cream and stir to combine – the spaghetti should NOT be completely cooked at this point. Remove from the heat and top with vegan parmesan and vegan feta. Cover and place in the oven for 15 minutes. Remove the lid and cook for another 10 minutes. Turn the oven to broil and allow the cheese to get slightly browned on top – usually takes 2 minutes, but keep an eye on it so it doesn't burn.
  • Remove from the oven and top with fresh basil. Spoon onto plates and enjoy!

  • If you don’t have an oven safe pan, then transfer everything to a baking dish before placing in an oven.
