These Vegan Harissa Beef Couscous Bowls are cozy, filling and have the perfect amount of spice & tang. The vegan “beef” is cooked in a tasty harissa sauce that has a little kick. The lemon couscous is bright and fresh. And the vegan feta sauce adds a nice tart bite to the bowls. Served up with naan on the side for dipping. This is the perfect vegan dinner.

Step One: Make the Couscous

I love making couscous. It is a nice switch up from rice or quinoa and it is ready in less than 10 minutes. For this couscous, I did a couple of things to add some extra flavor:

  • Toast the dry couscous in butter.
  • Add lemon juice before serving.

Melt the vegan butter in a skillet over medium heat. Add garlic powder, pepper & couscous. Toast for about a minute. Pour in the broth and bring to a boil. Lower heat, cover and simmer for 5 minutes, or until the liquid is absorbed. Remove the lid, add the lemon juice and fluff with a fork. Set aside.

Step Two: Make the Harissa Vegan “Beef”

Before we get to the “beef”, you will need to make the harissa sauce. Here’s what you need:

  • harissa paste – I got mine at Trader Joe’s
  • low sodium soy sauce
  • smoked paprika
  • oregano
  • pepper

Once the sauce is made, heat some oil in a skillet over medium heat. Add diced onion, garlic & bell pepper and cook down for 3 minutes. Add the vegan beef crumbles and harissa sauce. Cook for about 5 minutes, or until the “beef” is slightly crispy and the veggies are tender. Taste and adjust the seasonings as needed. Turn to low until ready to serve.

TIP: If you don’t like vegan beef crumbles, you can sub cooked lentils.

Step Three: Make the Vegan Feta Sauce

I LOVE this vegan feta sauce! It is perfectly tart and super creamy. Here is what you need:

  • non-dairy yogurt
  • vegan feta – I got mine from Trader Joe’s
  • whole grain mustard
  • lemon juice
  • garlic 
  • pepper
  • fresh basil

Combine the feta sauce ingredients in a bowl. Mix to combine, taste and adjust the seasonings as needed.

Step Four: Assemble & Serve

To serve, spread some hummus on the bottom of each bowl. Top with couscous and vegan beef. Sprinkle with fresh herbs and serve with the feta sauce and naan.

These bowls have layers of flavor! These are perfect for a quick weeknight dinner or meal prepped lunch! Make on a Sunday and eat throughout the week.

Ingredients

FOR THE COUSCOUS

  • 2 tablespoons vegan butter or oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 cup couscous dry
  • 1 cup broth I used vegan chicken broth
  • 1/2 lemon juiced
  • salt if needed

FOR THE HARISSA "BEEF"

FOR THE FETA SAUCE

  • 1/4 cup non-dairy yogurt unsweetened
  • 3 tablespoons vegan feta crumbled, I got mine from Trader Joe's
  • 1 tablespoon whole grain mustard
  • 1/2 lemon juiced
  • 1 clove garlic minced
  • pepper to taste
  • 1 tablespoon fresh basil chopped

FOR THE BOWLS

  • hummus
  • fresh dill optional
  • naan optional

  • Melt the vegan butter in a skillet over medium heat. Add the garlic powder, pepper & couscous. Toast for about a minute. Pour in the broth and bring to a boil.   • Meanwhile, combine the harissa paste, soy sauce, smoked paprika, oregano, pepper and a splash of water in a bowl. Mix to combine and set aside.
  • In another skillet, heat the oil over medium heat. Add the onion, garlic & bell pepper and cook down for 3 minutes. Add the vegan beef crumbles and harissa sauce. Cook for about 5 minutes, or until the "beef" is slightly crispy and the veggies are tender. Taste and adjust the seasonings as needed. Turn to low until ready to serve.
  • While the beef is cooking, combine the feta sauce ingredients in a bowl. Mix to combine, taste and adjust the seasonings as needed.
  • To serve, spread some hummus on the bottom of each bowl. Top with couscous and vegan beef. Sprinkle with fresh herbs and serve with the feta sauce and naan.

Notes

  • I like the vegan beef crumbles from Trader Joe’s. If you use a different brand that is frozen, thaw before using. If you don’t like vegan beef crumbles, sub cooked lentils.
