This Trader Joe’s Brown Butter Pumpkin Gnocchi is the perfect vegan dinner for fall. 6 Simple ingredients and ready in 20 minutes!

I love going to Trader Joe’s during the holidays – they have the most fun and festive foods. And one that I go back to every year is their pumpkin gnocchi. It is delicious and there are so many ways you can prepare it. Today we are making Trader Joe’s Brown Butter Pumpkin Gnocchi. The name basically says it all. Pillowy gnocchi, browned vegan butter, crispy garlic & fried sage. This recipe only has 6 ingredients and takes 20 minutes. But it doesn’t skimp on flavor. A super cozy dinner you will want all fall long – and no worries if you don’t have a Trader Joe’s nearby, just sub regular gnocchi!

- vegan butter
- fresh sage leaves
- garlic
- salt & pepper

You will need a pot and a skillet.

steps
step 1: cook the gnocchi
The best part about using gnocchi in any recipe is that it cooks super fast!
And this recipe comes together quick, so you want to have everything ready to go.
Bring a pot of water to a boil and add the gnocchi. They only need to cook for a couple minutes – they will float to the top when they are done.

step 2: brown the butter
While the water is boiling, we are going to bring everything else together.
As soon as your drop the gnocchi in the water, melt the vegan butter in a skillet over medium heat. Once it starts to bubble, add the sage leaves. Cook until crispy (about 1 minute) and remove with tongs.
Continue to let the butter brown – once you start to see some brown bits in the bottom of the pan, turn the heat down and add the garlic. Stir consistently for 1-2 minutes – you want the garlic to get crispy but not burn.

step 3: finish & serve
Add the drained gnocchi to the skillet with the butter & garlic.

Toss until everything is combined, seasoning with salt & pepper as you go.
Spoon the gnocchi onto plates and top with the crispy sage – also be sure to scoop out all of that butter and garlic from the skillet! This gnocchi recipe is so comforting and a great way to kick off fall cooking!


tips & tricks
When you brown butter it will melt, then it will bubble, then it will look like nothing is happening – this is when the magic happens. Slowly but surely brown bits will start to appear in the bottom of the pan. Be sure to watch the heat and stir as needed so you don’t end up with burnt butter.
The garlic is meant to be crispy. Just be sure to keep an eye on it and turn down the heat if it is getting too dark.

- 6 tablespoons vegan butter
- 6-8 fresh sage leaves
- 2-3 cloves garlic minced
- salt & pepper to taste
- vegan parmesan optional
