These Sweet Chili Tofu Bowls are not only packed with plant protein (20 grams per bowl), they are also super healthy & filling! The tofu is pan-fried until crispy and then tossed in a sweet chili sauce. Then it is loaded up in a bowl with rice, edamame, spinach, avocado & spicy vegan mayo. Perfect for a quick dinner or meal prepped lunches!

here’s what you need

  • oil
  • firm tofu
  • sweet chili sauce
  • low sodium soy sauce
  • sriracha
  • garlic
  • pepper
  • ground ginger
  • cooked rice
  • shelled edamame
  • avocados
  • spinach
  • spicy mayo – optional

You will need a skillet to cook the tofu!

steps

step 1: make the tofu

You want to drain the tofu and press it – I like to do this by putting the tofu between a couple plates and let it sit for a few minutes.

Cube the tofu and brown it in a little bit of oil on the stove. While the tofu is browning, we can make the chili sauce, which is just a mix of sweet chili sauce, soy sauce, sriracha, garlic, ginger powder and pepper.

Mix the sauce up and add it to the skillet with the tofu. Toss it for a few minutes until the sauce has coated the tofu and creates a nice crust.

step 2: assemble & serve

Now, we assemble. Add some cooked rice to each bowl (I like to use those frozen microwave packs of rice to keep things quick), and top with the tofu, edamame (I also get this pre-cooked from Trader Joe’s), spinach & avocado.

I like to drizzle over some spicy mayo, but you can skip it if it isn’t your thing.

tips & tricks

To make the spicy mayo, combine 4 parts vegan mayo to 1 part sriracha. 

I get my edamame pre-cooked and pre-shelled at Trader Joe’s. If you buy edamame in the shells, follow the package instructions to heat them and shell them before adding to the bowls.

  • Heat the oil in a skillet over medium heat. Add the cubed tofu to the skillet and cook until browned on 2 sides (approx. 3 minutes per side).
  • Meanwhile, add the sweet chili sauce, soy sauce, sriracha, garlic, pepper & ginger powder to a bowl and whisk to combine.
  • Add the sauce to the tofu skillet and cook for a couple more minutes, or until the sauce coats the tofu – turn a few times so the sauce coats all sides of the tofu and creates a nice crust. Remove from the heat.
  • To assemble, add rice to each bowl and top with tofu, edamame, spinach & avocado. Serve with the spicy mayo and enjoy!
