This Herby White Bean Salad is a simple, protein-packed dense bean salad that doesn't skimp on flavor. Perfect for meal prep!

- 2 15-ounce cans white beans drained & rinsed
- 2 tablespoons oil I used avocado oil
- 2 tablespoon red wine vinegar
- 3-4 cloves garlic minced
- 1/2 small red onion finely diced
- 12 ounces cherry tomatoes halved
- 4 tablespoons chopped herbs I used parsley, basil & chives
- salt & pepper to taste
- garlic bread optional, for serving
Add all of the ingredients to a large bowl. Season with salt & pepper, cover and place in the fridge to chill for 30 minutes (or longer).
Taste and adjust the seasonings as needed.
Serve with garlic bread on the side.
- This is best served chilled (after all of the ingredients have had time to meld), but you can serve it right away if you need to.
- If you are making this for meal prep, separate the salad into individual containers and keep in the fridge for 2-3 days.
- Don't have white beans? Sub with chickpeas instead.
