Chipotle Corn Rice
I don’t know about you, but rice is a staple in my diet. Jasmine, basmati, brown…you name it I eat it.
But sometimes you need to spice up your rice – make it interesting. And one of the easiest and tastiest ways to do that is with this Chipotle Corn Rice.
You get a slightly smoky/spicy flavor from the chipotles and a little bit of crunch and color from the corn.
It only takes an extra minute to jazz up your plain rice and it adds a ton of flavor to your plate.
This is the perfect addition to tacos, burritos or a Mexican Buddha Bowl – one of my all time favorites!
Chipotle Corn Rice
Ingredients
- 1 cup rice I used basmati
- 2 cups water
- 1/3 cup frozen corn unthawed
- 2 chipotle peppers in adobo sauce diced
- 1-2 tbsp. adobo sauce from chipotle pepper can, to taste
- salt to taste (optional)
Instructions
- Add first 5 ingredients to a medium pan over high heat. Bring to a boil, cover and reduce heat to low. Simmer until rice absorbs all of the water (approx. 10-12 minutes).
- Fluff rice with a fork, add salt (if using), and serve.
