Ingredients

rice
I used basmati

water
1/3
cup
frozen corn
unthawed
2
chipotle peppers in adobo sauce
diced
1-2
tbsp.
adobo sauce
from chipotle pepper can, to taste
salt
to taste (optional)
Instructions
Add first 5 ingredients to a medium pan over high heat. Bring to a boil, cover and reduce heat to low. Simmer until rice absorbs all of the water (approx. 10-12 minutes).
Fluff rice with a fork, add salt (if using), and serve.
