I got the idea for this Chimichurri Couscous & Roasted Sweet Potatoes recipe eating at a restaurant in LA a couple weeks ago. I was so in love with the dish that I had to create my own version. And it does not disappoint. The chimichurri couscous is to die for – I could eat this with everything! And the roasted sweet potatoes are seasoned to perfection and have the best crunch. It is a tasty and healthy meal!

Step One: Roast the Potatoes

I love roasting sweet potatoes in the colder months. The house warms up and they smell delicious. Plus they are super nutritious and can be added to all kinds of recipes – or even make a great snack.

To make them you will need:

  • sweet potatoes 
  • olive oil
  • garlic powder
  • onion powder
  • smoked paprika
  • chili powder
  • salt & pepper

Add all of the sweet potato ingredients to a baking sheet and toss to coat. Spread out in an even layer and place in the oven. Roast for 20 minutes, flip and place back in the oven for 10-20 more minutes – or until the sweet potatoes are slightly crispy & cooked through.

Step Two: Make the Chimichurri

This chimichurri recipe has been on TSV for years! It is one of the first sauces I posted and the recipe still stands on it’s own today!

My version of chimichurri has both cilantro and parsley. Cilantro isn’t traditional, but is my favorite. It adds so much flavor. The fresh herbs mixed with garlic, jalapeño, red onion, red wine vinegar & oil makes for the most flavorful sauce.

Step Three: Make the Couscous

We’re keeping the prep for the couscous simple since it is going to be tossed with the chimichurri – that’s where it will get the flavor.

Heat some oil in a skillet over medium heat. Add diced onion & garlic and cook for 3 minutes, or until slightly tender. Add dry pearl couscous and toast for about a minute. Pour in some broth and bring to a boil. Cover, lower the heat and simmer for 15-20 minutes, or until the couscous is cooked through.

Add 2 tablespoons of chimichurri to the couscous and toss to combine. Remove from the heat and add a couple handfuls of arugula. Toss until it is slightly wilted.

Step Four: Serve

Everything is ready and it is time to assemble and serve. To each bowl add a big spoonful of couscous and top it with some sweet potatoes.

I like to serve extra chimichurri on the side and I also like adding a little more fresh arugula to each bowl – it adds a nice crunch, and there’s nothing wrong with some extra greens.

This recipe is great warm, but you can eat the leftovers cold. Perfect for next day lunches!

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Add all of the sweet potato ingredients to the baking sheet and toss to coat. Spread out in an even layer and place in the oven. Roast for 20 minutes, flip and place back in the oven for 10-20 more minutes – or until the sweet potatoes are slightly crispy & cooked through. Keep an eye on them so they don't burn.
  • Meanwhile, heat the oil in a skillet over medium heat. Add the onion & garlic and cook for 3 minutes, or until slightly tender. Add the couscous and toast for about a minute. Pour in the broth and bring to a boil. Cover, lower the heat and simmer for 15-20 minutes, or until the couscous is cooked through.
  • While the couscous is cooking prepare the chimichurri.
  • Add 2 tablespoons of chimichurri to the couscous and toss to combine. Remove from the heat and add the arugula. Toss until it is slightly wilted. Taste and adjust the seasonings as needed.
  • To serve, add couscous to each bowl and top with sweet potato. Serve with extra chimichurri on top.

  • I like to make the chimichurri from scratch, but Trader Joe’s also makes a pre-made one. Find it in the dip section!
  • The nutrition only includes the chimichurri in the couscous, not any served on the side.
