The Best Veggie Everything Bagel Sandwich – a toasted bagel is loaded up with vegan cream cheese, avocado and a whole lotta veggies. Perfect make ahead lunch.
There are two things that never get old…everything bagels and avocado. And guess what? This sandwich has both of those!
And while I’d normally just stop with the bagel and avocado and call it a day, today we are upping the stakes, and adding a whole lotta veggies and vegan cream cheese.
If you haven’t dabbled in vegan cream cheese yet, then now is the time. I’ve told you time and time again, I think vegan cream cheese is one of the few cheeses that vegans have gotten right (so far at least). So, if you’re like me and don’t like most vegan cheeses, take my advice and at least try out vegan cream cheese.
For this sandwich I went with my favorite flavor…Jalapeno. Because spice is always a good idea. But feel free to swap it for any flavor you’d like.
TSV TIP: My favorite vegan cream cheese brands are Trader Joe’s, GoVeggie, Tofutti and Kite Hill.
For the rest of the veggies, there’s no hard and straight rules as to what you can use. I wanted a lot of crunch to accompany the creamy avocado and cream cheese spread. So I went with thick tomato slices, red onion, radishes, arugula and micro greens.
Some other veggie options would be bell pepper, cucumber, thinly sliced zucchini, spinach, romaine. Whatever you can think of, it can go on this sandwich.

- Spread 1 tbsp of vegan cream cheese on every bagel half.
- Top each bottom slice with tomato, red onion, radishes, avocado, arugula and micro greens.
- Place the top slices on top of the veggies and serve.
