The Best Veggie Everything Bagel Sandwich - a toasted bagel is loaded up with vegan cream cheese, avocado and a whole lotta veggies. Perfect make ahead lunch.

4 everything bagels sliced in half and toasted 4 oz vegan cream cheese use plain or flavored 2 large tomatoes sliced 1/2 red onion sliced 2 radishes thinly sliced 2 avocados sliced 2 cups arugula micro greens to taste
Spread 1 tbsp of vegan cream cheese on every bagel half.
Top each bottom slice with tomato, red onion, radishes, avocado, arugula and micro greens.
Place the top slices on top of the veggies and serve.
