I love a delicious sandwich or wrap. And these Cajun Tofu Wraps are not only tasty, they are also filled with veggies and pack 16 grams of protein per serving! You get a filling meal that doesn’t disappoint on flavor. The tofu is coated in a cajun sauce before being baked until crispy. It is then added to a wrap with crispy veggies and a vegan lemon pepper aioli! Grilled in a skillet until crispy. These vegan wraps are delicious!

Step One: Make the Cajun Tofu

Start by draining and pressing a block of extra firm tofu. No need to overthink pressing tofu – just put it on a plate and put another plate or bowl on top of it for 5-10 minutes. This will press out the liquid.

To make the sauce for the tofu combine corn starch, cajun seasoning, oil and water in a shallow dish. Whisk until a sauce is formed.

Cut the tofu into 16 strips. Dip a strip into the sauce and coat on all sides. Allow the excess to drip off and place on the prepared baking sheet. Repeat with the remaining tofu.

Place the baking sheet in the oven for 20 minutes. Flip the tofu and cook for another 5-10 minutes, or until the tofu is crispy.

Step Two: Make the Aioli & Prep the Veggies

While the tofu is in the oven we are going to whip up a lemon pepper aioli. You will need:

  • vegan mayo
  • grated garlic
  • lemon juice
  • pepper

Add all of the aioli ingredients to a bowl and mix to combine. Taste and adjust the seasonings as needed. Set aside.

For the wrap filling I used tomato slices, red onion and spinach. Grab all of your veggies so you will have them ready to go when it is time to assemble.

Step Three: Assemble & Grill

For these wraps I used large flour tortillas, but these would be great with lavash or spinach wraps.

To assemble, add some aioli down the center of a wrap. Top with spinach, onion, tomato and 4 tofu strips. Tuck the sides in and roll up like a burrito. Repeat with the remaining wraps.

Place a skillet on the stove over medium-high heat – you want it hot so the wraps will brown quickly. Spray the skillet with a little oil and place a wrap in the skillet seam-side down. Cook for about a minute (or until crispy) and flip to brown the other side. Repeat with the remaining wraps, adding more oil spray if needed.

Step Four: Serve

Once all of the wraps are nice and browned on both sides, cut them down the middle and serve! If you have any aioli left over you can serve it on the side.

I also like to eat these with some plain ruffles. I mean, any chip works, but there is something about ruffles with a wrap…it just works.

These are best served right away to keep that crispy crunch on the tofu and the outside of the wrap.
