Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Combine the corn starch, cajun seasoning, oil and 3 tablespoons of water in a shallow dish (see notes). Whisk until a sauce is formed. Cut the tofu into 16 strips. Dip a strip into the sauce and coat on all sides. Allow the excess to drip off and place on the prepared baking sheet. Repeat with the remaining tofu. Place the baking sheet in the oven for 20 minutes. Flip the tofu and cook for another 5-10 minutes, or until the tofu is crispy.
Meanwhile, add all of the aioli ingredients to a bowl and mix to combine. Taste and adjust the seasonings as needed. Set aside.
To assemble, add some aioli down the center of a wrap. Top with spinach, onion, tomato and 4 tofu strips. Tuck the sides in and roll up like a burrito. Repeat with the remaining wraps.
Place a skillet on the stove over medium-high heat. Spray with oil and place a wrap in the skillet seam-side down. Cook for about a minute (or until crispy) and flip to brown the other side. Repeat with the remaining wraps, adding more oil spray if needed.
Cut the wraps in half and serve.
