Preheat the oven to 425 degrees and place the dough on a lightly floured surface to come to room temperature. Line a baking sheet with parchment paper and set aside.
Roll the dough out and use a cookie cutter to make 8 christmas trees. Place them on the prepared baking sheet.
Spread some marinara sauce on each tree then top with vegan mozzarella & pepperoni. Place in the oven for 15-20 minutes or until the dough is browned on the bottom and the cheese is melted - this will depend on how thick you make the dough.
Remove from the oven and top with parsley. Serve and enjoy!

Notes
I used a glass straw to cut the pepperoni into small "ornament-like" circles. You could also just quarter some vegan pepperoni to make them fit.
