Ingredients

Instructions

  • Add the dates, oats, coconut, almond butter, agave, vanilla extract & protein powder to a food processor. Blend until a ball of dough forms - this will take a couple minutes. Scrape down the sides as needed.
  • Separate the bowl of dough into 12 pieces, roll each piece into a ball and place onto a parchment-lined baking sheet. Place in the freezer for 10 minutes.
  • Add the chocolate chips and coconut oil to a microwave-safe bowl and heat for 1 minute. Remove from the microwave and stir until the chocolate is melted and smooth - you can pop it back in the microwave if needed.
  • Use a fork to dip each ball into the chocolate until coated, allowing the excess to drip off. Place back on the baking sheet. Once they are all coated sprinkle with some more shredded coconut and place in the freezer for 20 minutes.
  • Remove from the freezer and enjoy.

Notes

  • I like to store these in the fridge.
  • Some other topping ideas: flakey salt or crushed almonds!
  • If you don't want to use protein powder you can add another 1/3 cup of oats.
