Southwest Potato Salad

This Vegan Southwest Potato Salad is the perfect BBQ side! Chunky potatoes, creamy chipotle dressing and a mix of fresh veggies.


Step 1

Potatoes. Add the potatoes to a stock pot and cover with water. Bring to a boil and cook until tender. Drain and cool. Cut in half and add to a large bowl.

Prep. While the potatoes are boiling, dice the other veggies.

Step 3

Sauce. Combine the sauce ingredients in a bowl with all of the diced veggies. Toss to combine and place in the fridge.

Assemble. Combine the potatoes and the dressing.
